Small‑Batch Chicken & Cornbread Dressing Casserole (Easy Leftover Makeover)

If you love easy, delicious small‑batch comfort meals, this Chicken and Cornbread Dressing Casserole is the perfect way to reinvent leftovers. We’re taking the cornbread and cooked chicken from earlier in the week and turning them into a flavorful, budget‑friendly casserole inspired by classic Southern Thanksgiving dressing. It’s packed with all the savory herbs and textures you expect from a holiday favorite, but simplified into an easy weeknight dinner for two. I’m using a Jiffy Cornbread Mix, but any homemade or store‑bought cornbread works beautifully in this recipe, it is a fabulous way to reduce food waste while creating something totally new.

Small Batch Chicken and Dressing Casserole

Ingredients
  

  • 1 c Diced Cooked Chicken
  • 1.5 c Crumbled Cornbread
  • 1 c Chicken Broth If you are coming from my YouTube video, this is different from what I show in the video
  • 2 Eggs
  • 2 t Diced Celery
  • 2 T Diced Onion
  • ½ t Dried Sage
  • ½ t Poultry Seasoning
  • 1/8 t Salt
  • 1/8 t Pepper

Instructions
 

  • Preheat oven to 400
  • In a pan sauté celery and onion until they are tender
  • Add all ingredients to a bowl and stir to combine (be sure to avoid putting your hot celery and onions into the eggs. Add the eggs first and the celery and onions last)
  • Place in a greased loaf pan
  • Bake for 40-45 minutes until the center is set
  • Cool slightly
  • Enjoy!
