We’re taking the cornbread and cooked chicken from earlier in the week and turning them into a flavorful, budget‑friendly casserole inspired by classic Southern Thanksgiving dressing. It’s packed with all the savory herbs and textures you expect from a holiday favorite, but simplified into an easy weeknight dinner for two. I’m using a Jiffy Cornbread Mix, but any homemade or store‑bought cornbread works beautifully in this recipe, it is a fabulous way to reduce food waste while creating something totally new.

Small Batch Chicken and Dressing Casserole
Ingredients
- 1 c Diced Cooked Chicken
- 1.5 c Crumbled Cornbread
- 1 c Chicken Broth If you are coming from my YouTube video, this is different from what I show in the video
- 2 Eggs
- 2 t Diced Celery
- 2 T Diced Onion
- ½ t Dried Sage
- ½ t Poultry Seasoning
- 1/8 t Salt
- 1/8 t Pepper
Instructions
- Preheat oven to 400
- In a pan sauté celery and onion until they are tender
- Add all ingredients to a bowl and stir to combine (be sure to avoid putting your hot celery and onions into the eggs. Add the eggs first and the celery and onions last)
- Place in a greased loaf pan
- Bake for 40-45 minutes until the center is set
- Cool slightly
- Enjoy!
