Crockpot Cooking for One

Hi friend! These are all of the recipes shown in my crockpot cooking for one video. These recipes can easily be doubled or tripled, but if you triple them be sure to use a larger crockpot.

Crockpot Meatball Sub Sandwich

Using frozen meatballs, and a jarred Marinara sauce this dish can be created in 2 hours.

Ingredients
  

  • 5-6 Frozen Meatballs
  • 2 Cups Marinara Sauce
  • 2 Slices Havarti or Provolone Cheese
  • 1 Sub Roll

Instructions
 

  • Place frozen meatballs in crockpot and cover with the marinara sauce.
  • Cook on High for 2 hours, Once the meatballs are done, place on a toasted sub roll and top with cheese.

Crockpot Buffalo Chicken Wraps

Use romaine lettuce, or a tortilla or both to create this yummy wrap.

Ingredients
  

  • 1 Chicken breast
  • 2 T Butter
  • ½ T Ranch Seasoning
  • ¼ c Frank’s Red Hot Sauce
  • 2 T Cream Cheese
  • Optional wrap ingredients:
  • Tortilla
  • Romaine Lettuce
  • Avocado
  • Tomato

Instructions
 

  • Place chicken in the crockpot and top with ranch seasoning.
  • Place butter on top of chicken and cook on low for 3 hours.
  • Once your chicken has come up to temperature remove it from the crockpot and let it rest for a few minutes.
  • In the crockpot add your hot sauce and cream cheese stirring until your cream cheese has melted.
  • Slice the chicken and place in the crockpot with the buffalo sauce.
  • Create your wrap.

Tuscan Chicken

This recipe is for one, but can easily be doubled.

Ingredients
  

  • 1 Chicken Breast
  • ¼ C. Chicken Broth
  • 1 Garlic Clove
  • 1 T Sundried tomatoes
  • 1 T Chopped Artichoke Hearts
  • 1 T Greek or Italian Seasoning
  • ½ c Spinach

Instructions
 

  • Place all ingredients in the crock pot except the spinach and cook on low for three hours.
  • Once your chicken has cooked, remove it from the crockpot and let it rest.
  • Place chopped spinach into the crockpot and allow it to warm.
  • Slice the chicken and top it with the crockpot sauce.

Beef Stew for One

This beef stew recipe can easily be doubled. It's finished in just 4 hours in the crockpot.

Ingredients
  

  • 1/4 lb Stew Meat
  • ½ t of Salt Pepper, garlic powder, onion powder and thyme
  • 1 Bay leaf
  • 1 T Tomato Paste
  • 2 c Beef Broth
  • 1 c Water
  • 4 Petite Potatoes
  • 6 Mini Carrots

Instructions
 

  • Place all ingredients in the crockpot and cook on high for 4 hours.

Crockpot Steak Sandwich

This yummy steak sandwich can be ready for you in as little as one and a half to two hours.

Ingredients
  

  • 1/2 lb Sliced Steak or Shaved Steak
  • ½ Onion
  • ½ Bell Pepper
  • 1 Clove of Garlic
  • 1 t Steak Seasoning
  • 1 t Worcestershire Sauce
  • 2 Slices of Cheese Havarti or Provolone
  • Sub Roll

Instructions
 

  • Dice onion and pepper and mince the garlic and place in the crockpot.
  • Place steak in the crockpot and top with the Worcestershire sauce and steak seasoning.
  • Cook on High for 1.5-2 hours.  
  • Once your veggies are softened and your steak is cooked, place steak mixture on a toasted sub roll and top with cheese.

I have a little bit bigger crockpot, a 6 quart if I double the recipes we eat for two or three more days… Your video instructions are easy to follow and very enjoyable sincerely

    1. You sure can! Your cooking time may need to be adjusted though.

    I come from a long line of Southern cooks who scoff at people who need to use a recipe to cook. I’ve cooked on a regular daily basis or as few as four, and as many as nine. My husband died on New Year’s Day, and I’ve been struggling ever since. Nothing in life prepared me to cook for one! So, I’ve been existing on frozen meals, sandwiches, and salads for a year. I bumped into you video on YouTube this afternoon. I’ve binge-watched everything I could find in the six hours since. Do you have a cookbook on cooking for one?
