Crockpot Chicken Picatta for Two

Ingredients
  

  • 1 c Chicken Broth
  • 1 lb Chicken Cutlets
  • ¼ c White Wine
  • 1-2 T Drained Capers start with 1 and add another tablespoon if you like the briny flavor of the capers
  • ½ Lemon zested and juiced
  • 1 Clove Garlic Minced
  • 1 T Corn Starch
  • 2 T Water
  • Parmesan Cheese for the top
  • Zoodles or Spaghetti Noodles to serve with the picatta

Instructions
 

  • Place chicken, broth, wine and garlic into the crockpot
  • Cook on low for 4-6 hours or high for 2-3 hours
  • 30 minutes before the end of cooking combine the corn starch and water and place into the crockpot
  • Also add the lemon juice, lemon zest and capers to the crockpot
  • Cook for the remaining 30 minutes
  • After 30 minutes if your broth is not thick enough for you, you can add another 1 T cornstarch or thicken the broth with flour on the stove.
  • Serve over spaghetti or zucchini noodles
  • Enjoy!

Crockpot Apple Crisp

Ingredients
  

  • 1 c Diced Apples
  • 2 T Water
  • ½ T Sugar
  • ½ t Cinnamon
  • For the Topping
  • 2 T Almond Flour
  • 2 T Toasted Oats toast oats in a pan over low heat for a crunchier texture
  • ½ t Cinnamon
  • 1 T Melted Butter
  • 2 T Brown Sugar
  • Ice Cream or Whipped Topping to top the crisp

Instructions
 

  • Place diced apples into crockpot and top with the sugar and cinnamon.
  • Add water and stir to combine
  • Make the topping by combing the almond flour, cinnamon, oats, butter, and brown sugar
  • Top the apples with the topping
  • Cook on low for 4-6 hours or high for 2-3 hours
  • Top with whipped topping or ice cream
  • Enjoy!
