Downsized Fall Desserts: 3 Easy Treats for Two

Fall baking season is officially here, but when you’re cooking for just one or two people, making a massive batch of treats just leads to too many leftovers. If you want all the comforting autumn flavors without the mountain of dishes, these recipes are for you.

Today, we are making three incredibly simple, downsized fall desserts scaled perfectly for two people.

1. Pumpkin Spice Cake Pops

There is something so fun about a cake pop, but buying them individually—or making a massive batch from scratch—is a hassle. This version gives you that bakery-style flavor right at home with minimal effort. They are sweet, spiced, and perfectly portioned.

2. 2-Ingredient Apple Danish

If you need a quick sweet fix that feels like it came straight from a local bakery, this apple danish is a lifesaver. With just two main ingredients, it comes together in minutes. It makes for an inviting morning pastry or an effortless evening sweet treat.

3. Egg-Free Tiramisu

Tiramisu is a classic favorite, but traditional recipes often require raw eggs and make enough to feed a crowd. This egg-free, downsized version is creamy, rich, and scaled down so you can enjoy every single bite without any food waste or hassle.

Pumpkin Spice Cake Pops

Created by Stacey

Ingredients

  • 1 Box Spice Cake Mix baked by the package instructions
  • 1-1.5 c Pumpkin Puree
  • 16 oz Melting Chocolate
  • 1 T Oil

Instructions

  • Bake the spice cake according to the package directions
  • Allow the cake to cool and crumble the cake in a large bowl
  • Add 1 c of the pumpkin puree and stir to combine
  • Check to see if your mixture is moist enough by making a small ball
  • Add .5 c more pumpkin if you need a little more moisture to help the cake pops stay together.
  • Using a medium (2 in) scoop roll all the cake pops
  • Refrigerate for 30 minutes while you melt the chocolate
  • While melting the chocolate if it doesn’t flow easily add 1 T of oil. I prefer coconut oil, but you can use shortening as well
  • If you are making these cake pops place a cake pop stick in the rolled cake pops and dip into the chocolate. If you are making these truffles leave out the stick and dip the truffle using 2 forks
  • Place the dipped cake pops onto a parchment lined baking sheet and sprinkle with the sprinkles before the chocolate hardens
  • Once all the cake pops (or truffles if you aren’t using the stick) have hardened you are ready to eat, store, or giveaway.
  • I do like to store mine in the refrigerator, but they will be fine in the storage bags.
  • Enjoy!

  • Place apple pie filling in the center of the square
