Small Batch Chili for Two

Ingredients
  

  • ½ lb Browned Ground Beef
  • 1 c Diced Tomatoes I like the fire roasted but you can use regular diced tomatoes here
  • 1 15 oz can of Tomato Sauce
  • 1 15 oz can of Black Beans
  • 2 T Tomato Paste
  • 2 T Chili Seasoning
  • 1 c of water
  • Optional Chili Toppings such as Sour Cream Oyster Crackers, Cheddar Cheese and jalapenos

Instructions
 

  • Add your browned ground beef to a pan and add all of the other ingredients.
  • Simmer on the stovetop (or in your instant pot or crockpot)
  • Simmer for at least 20 minutes
  • Top with any chili toppings
  • Serve and Enjoy!

Chili Seasoning Mix

This is for a mild chili seasoning mix. Add 1/4 t of Crushed red Pepper Flakes to amp up the spice.

Ingredients
  

  • 2 T Chili Powder
  • 1 T Cumin
  • 2 t Paprika
  • 2 t Oregano
  • 1 t Garlic Powder
  • 1 t Onion Powder

Instructions
 

  • Combine all ingredients and store in an air tight container.

Half and Half Cornbread Muffins

In this recipe, we are making half of the cornbread muffins regular cornbread and the other half Jalapeno Cornbread. This recipe makes 12 corn muffins

Ingredients
  

  • 1 Box of Jiffy Corn Muffin Mix any corn muffin mix will work here
  • 1 Egg
  • 1/3 c Milk
  • ½ c Cheddar Cheese
  • ½ c Frozen Corn
  • 1 T Diced Jalapenos

Instructions
 

  • In a bowl combine the egg, milk and corn muffin mix and stir to combine
  • In a greased muffin tin use half of the batter and fill 6 muffin tines
  • Add the remaining ingredients to the corn muffin mix
  • Fill the rest of your muffin tin with this mixture
  • Bake at 400 for 14-16 minutes
  • Enjoy!
