Warm up with 5 Instant Pot Soups for One — all quick, cozy, and made in small batches so you get the perfect amount without leftovers. These single‑serving soup recipes are quick, easy, delicious and affordable.

I know how frustrating it can be to scale recipes down or waste ingredients. These soups are designed to give you one perfect serving (or two small bowls) using simple pantry staples and quick cooking times.

Here’s what I’m making today:

Instant Pot Vegetable Soup for One

Ingredients
  

  • 1 c Tomato Sauce
  • 1 c Chicken Broth Vegetable Broth would work well too
  • 2/3 c Frozen Mixed Vegetables
  • 2/3 c Frozen Diced Potatoes
  • 1 t Greek Seasoning Blend
  • 1 Bay Leaf

Instructions
 

  • Cook on High Pressure for 3 Minutes
  • Allow the Instant Pot to Manually Release for 10 Minutes
  • Enjoy!

Instant Pot Mexican Pork Stew for One

Ingredients
  

  • ¼ lb Pork Loin Cubed
  • 1 t Cumin
  • ¼ t Garlic Powder
  • ¼ t Oregano
  • 1/8 t Salt
  • 1/8 t Pepper
  • ½ c Salsa Verde
  • 1 t Diced Jalapeno
  • ½ c Frozen Corn
  • 2 c Chicken Broth
  • 1 T Flour

Instructions
 

  • Create your seasoning blend by combining the cumin, garlic powder, oregano, salt and pepper.
  • Coat the pork loin with half of the seasoning blend.
  • Using the sauté function brown the pork and sauté all of the vegetables except the frozen corn.
  • Add the flour and stir until all of the pork and vegetables are coated.
  • Turn off the sauté function add the frozen corn and chicken broth and salsa verde
  • Close the lid and cook on the Soup function
  • Once cooking is complete allow Instant Pot to naturally release for 10 minutes
  • Enjoy!

Instant Pot Chicken Noodle Soup for One

Ingredients
  

  • 8 oz Chopped Chicken Breast
  • 2 c Chicken Broth
  • 2 T Diced Celery
  • 2 T Diced Carrots
  • 1 T Diced Onions
  • 1 Clove of Garlic Minced
  • ¼ t Dried Parsley
  • 1/8 t Salt
  • 1/8 t Pepper
  • ½ c Rotini Pasta
  • 1 t Oil

Instructions
 

  • Add oil to the Instant Pot and turn on the sauté function
  • Sauté celery, carrots, onions and garlic
  • Once the veggies are softened, turn off the sauté function
  • Add the chicken, broth, pasta, parsley salt and pepper
  • Close the lid and cook on High Pressure for 7 minutes
  • Once cooking is complete, manually release the pressure. Be prepared for some spewing once you release the pressure due to the level of broth in our soup.
  • Enjoy!

Instant Pot Zuppa Toscana for One

Ingredients
  

  • 2 Slices of Bacon Chopped Precook your bacon if you’d like a crunchier texture
  • ¼ lb Mild Italian Sausage
  • 1 Potato Sliced thin
  • 1/2- c Chopped Kale
  • 1 ¾ c Chicken Broth
  • ¼ c Heavy Cream
  • 1 Garlic Clove Minced
  • 1 T Diced Onion
  • Optional Grated Parmesan Cheese

Instructions
 

  • Using the Sauté function brown the bacon and the sausage. If you precooked your bacon just brown the sausage.
  • Add the onion and garlic and sauté it until the onion and garlic is softened and fragrant
  • Turn off the sauté function and add the potato and chicken broth
  • Cook on High Pressure for 3 minutes
  • After the cooking time is complete, allow the instant pot to naturally release for 10 minutes
  • Remove the lid and add the kale and the heavy cream
  • If using parmesan cheese top soup with the parmesan cheese
  • Enjoy!

Instant Pot Sausage and Lentil Soup for One

Ingredients
  

  • ¼ lb Mild Italian Sausage
  • ¼ c Dry Lentils that have been rinsed
  • 2 c Chicken Broth
  • ¼ c Petite Diced Tomatoes
  • 2 T Onion
  • 2 T Celery
  • 2 T Carrots
  • ¼ t Garlic Powder
  • ¼ t Oregano
  • 1/8 t Thyme
  • ¼ t Basil
  • Salt and Pepper
  • 1 Bay Leaf

Instructions
 

  • Using the sauté function brown the sausage.
  • Add the veggies and sauté for 2-3 minutes
  • Turn off the sauté function and add the rest of the ingredients
  • Close the lid and cook on the soup function
  • Once the cooking time is complete allow the instant pot to naturally release for 10 minutes
  • Enjoy!
