Shortcut Chicken Tikki Masala with Fragrant Rice

Using a store bought Tikki Masala Sauce this recipe creates a delicious meal in minutes.

Ingredients
  

  • ¼ c Tikki Masala Sauce
  • 1 Chicken Breast Diced
  • ¼ c Chopped Red Pepper
  • ¼ C Chopped Onion
  • 1/8 t Salt
  • 1/8 t Pepper
  • 1/8 t Curry Powder
  • 1/8 t Ginger
  • 1/8 t Garlic Powder
  • 1 Cinnamon Stick
  • 3 Cardamon Pods
  • 1 c Rice
  • 1 ¼ c Water

Instructions
 

  • Wash your rice and place rice and water in the rice cooker. Add cinnamon stick and cardamon pods and stir.
  • Season chicken with spices and place chicken, peppers and onion in the steamer basket and put into the rice cooker
  • Cooker on the White Rice setting.
  • Once cooking time is over remove the steamer basket and toss chicken, onions and peppers in the Tikki Masala Sauce.
  • Serve over the rice.
  • Enjoy!

Rice Cooker Beef and Barley Stew for One

This hearty stew is packed full of veggies and barley and is tasty and satisfying. I used Italian Barley in the recipe, but you can swap it for Pearlized Barley if that is available in your area.

Ingredients
  

  • ¼ lb Stew Meat cut into small pieces
  • 2 T Diced Carrots
  • 2 T Diced Celery
  • 2 T Diced Onions
  • ¼ c Barley
  • ¼ t Salt
  • ¼ t Pepper
  • 1/8 t Ground Thyme
  • 2 c Beef Broth
  • 1 t Tomato Paste

Instructions
 

  • Turn the rice cooker on steam and place beef and vegetables in the rice cooker.
  • Close the lid and steam for 3 minutes or until beef the browned and the veggies are slightly softened.
  • Turn off the rice cooker and add the remaining ingredients.
  • Stir, close the lid and cook on the Brown Rice setting.
  • There is a long cook time on this one. I had to stop the cooking after an hour and it was cooked through and the Barley was tender. You may want to check it after an hour and see if you need more cooking time.
  • Enjoy!

Rice Cooker Pork Fried Rice

This fried rice recipes uses leftover pork, but you could swap the pork for chicken or steak if you had that on hand.

Ingredients
  

  • 1 Beaten Egg
  • ¾ c Jasmine Rice
  • 1 c Broth
  • 1 c Peas and Carrots
  • 4 oz Diced Meat Pork, Chicken or Steak
  • 2 T Diced Onions
  • 2 t Soy Sauce
  • 2 t Thai Chili Sauce
  • ½ t Garlic Powder
  • ½ t Ground Ginger
  • 1/8 t Pepper

Instructions
 

  • Combine all ingredient except the egg, and place in Rice Cooker.
  • Stir the ingredients and then add beaten egg.
  • Close Rice Cooker lid and cook on the White Rice setting.
  • At the end of the cooking cycle. Open the Rice Cooker and fluff the fried rice.
  • Enjoy!

Rice Cooker Apple and Cinnamon Oatmeal for One

Ingredients
  

  • ½ c Oats
  • 1 c Milk
  • ¼ c Diced Apples
  • ½ t Cinnamon
  • 1/8 t Nutmeg
  • ¼ t Salt
  • 1-2 T Maple Syrup

Instructions
 

  • Add all ingredients to the Rice Cooker.
  • Cook on the Oatmeal setting.
  • At the end of the cooking cycle, open the lid and stir the oatmeal.
  • Enjoy!

Rice Cooker Chicken Penne Pasta

Ingredients
  

  • 1 Chicken Breast Diced
  • ½ c Penne Noodles
  • 1 c Marinara
  • ¼ c Water
  • 1 T Greek Seasoning
  • 2 T Shredded Mozzarella

Instructions
 

  • Place Penne, Marinara and Water in the rice cooker.
  • Cover diced chicken with the Greek Seasoning and place in to the steamer basket. Place steamer basket in the rice cooker.
  • Close the lid and cook on the steam setting for 11 minutes.
  • Once the cooking cycle is complete, let the pasta sit on the warm setting for 5 minutes.
  • After 5 minutes, pour the steam chicken into the pasta and stir to combine.
  • Top with the Mozzarella Cheese
  • Enjoy!

Greek Seasoning Blend

This Greek seasoning blend is great as a salad dressing seasoning, a vegtable seasoning or on chicken.

Ingredients
  

  • 2 T Oregano
  • 2 T Basil
  • 1 T Garlic Powder
  • 1 T Onion Powder
  • 1 t Salt
  • 1 t Pepper

Instructions
 

  • Combine all spices and store in an airtight container.
