Ham and Cheese Egg Bites

These egg bites are a perfect breakfast on the go! They will keep in the fridge for 3 days, and can be frozen for easy meal prep.

Ingredients
  

  • 6 Eggs
  • ½ C Milk
  • ¼ c Shredded Cheese
  • ¼ c Diced Ham
  • ¼ c Chopped Spinach
  • ¼ c Diced Red Peppers

Instructions
 

  • Using a blender combine eggs, milk and cheese.
  • Pour egg mixture into a well-greased muffin tin.
  • Add ham, peppers, spinach and cheese to the top of the egg mixture in the muffin tin.
  • Bake at 350 for 20 Minutes
  • Enjoy

Potato Soup for One

This is a copycat Panera Potato Soup. It is a thinner soup, if you prefer a thicken broth you can add 1 T of flour to the soup to thicken it up.
 

Ingredients
  

  • 1 C Cubed Potatoes
  • 1 C Chicken Broth
  • 1 Slice of Cooked Bacon Chopped
  • 2 T Diced Celery
  • 2 T Diced Onions
  • ¼ t Minced Garlic
  • Salt and Pepper
  • 1 T Cream Cheese
  • ¼ c Heavy Cream
  • ¼ C Cheddar Cheese

Instructions
 

  • Add all the ingredients to a 2 qt crockpot EXCEPT the Cream Cheese, Heavy Cream, and Cheddar Cheese. You will add these after your soup is finished cooking.
  • Cook on High for 3 Hours or on Low for 6. Once the veggies are fork tender turn off the crockpot and add the cream cheese, cheddar cheese, and heavy cream.

Lima Beans

These lima beans are quick to put together and have a little kick with the red pepper flakes. If you do not like spicy food you can leave out the red pepper flakes.

Ingredients
  

  • ¼ c Diced Ham Chinks
  • 1 Bag Frozen Lima Beans
  • 3 Cups Water
  • ¼ t Garlic Powder
  • ¼ t Onion Powder
  • ¼ t Red Pepper Flakes
  • 1/8 t Salt and Pepper

Instructions
 

  • Combine all ingredients into a pan and bring to a boil.
  • Boil for 20 minutes until the Lima Beans are tender
  • Enjoy!

Ham Salad

Ingredients
  

  • 2 C Chopped Ham
  • 1/3 C Mayo
  • 1 T Chopped Bread and Butter Pickles
  • ½ Celery Stalk Diced
  • ½ t Dijon Mustard
  • 1 t Ranch
  • 1 t White Pepper
  • 1 t Onion Powder
  • ½ t Garlic Powder
  • ½ t Red Pepper Flakes

Instructions
 

  • Combine all ingredients and store in a deli container.
    Have this as a sandwich, with crackers, or even a lettuce wrap.
  • Enjoy!

Ham and Pimento Cheese Pinwheels

These pinwheels are a family favorite. Using store bought puff pastry this comes together in minutes! Serve right out of the oven warm or serve these cold as well either way, you can't go wrong!

Ingredients
  

  • 1 c Diced Ham
  • 1 c Pimento Cheese
  • 1 Sheet of Puffed Pastry
  • 1 Egg to use as an Egg Wash

Instructions
 

  • Thaw puff pastry sheet and roll out to ¼ in ch thickness.
  • Spread Pimento Cheese all over leave about a ½ inch space on one end.
  • Top pimento cheese with the ham.
  • Roll the puffed pastry toward the side that has the edge clear of pimento cheese.
  • Slice in 1 inch sections and place on a parchment paper lined baking sheet
  • Brush on Egg Wash
  • Bake at 400 for 17-20 minutes, until golden brown.
  • Enjoy!

Stromboli

This inside out pizza is a crowd pleaser. Using the store bought pizza crust saves you time; you can have this done in less than 20 minutes! Whatever your favorite pizza toppings are can go into your Stromboli. This recipe uses ham and pepperoni but you could also add onions, peppers and black olives as well.

Ingredients
  

  • Pizza Crust
  • Sliced Mozzarella Cheese
  • Sliced Provolone Cheese
  • Pepperoni
  • ½ c Diced Ham
  • 3 T Melted Butter
  • Sprinkling of Parmesan Cheese and Parsley Flakes for the Butter

Instructions
 

  • Roll out pizza crust.
  • Top pizza crust with cheeses, pepperoni, and diced ham.
  • Roll the Pizza Crust, like a burrito, into a log shape and pinch the edges closed
  • Lay on a Parchment Paper Lined Baking Sheet seam side down.
  • Mix Parmesan Cheese, Parsley Flakes and Butter together.
  • Brush Stromboli with Butter mixture
  • Slice 4 vent holes across the top of the Stromboli.
  • Bake at 400 for 15-20 minutes until golden brown.
  • Enjoy!

Italian Chopped Salad

This delicious, chopped salad is so versatile and a great way to use leftover deli meat and ham. Top with a store-bought Italian dressing or make your own by combing 4 T Olive Oil 2 T White Wine Vinegar and 1 tsp of Greek Seasoning Blend.

Ingredients
  

  • Lettuce
  • Cherry Tomatoes
  • Chopped ham and other deli meat such as salami or pepperoni
  • Mozzarella Cheese
  • Pepperoncini Peppers

Instructions
 

  • Combine all ingredients and toss with salad dressing.
  • Enjoy!

These recipes will make you want to cook a ham just for the meal prep! These recipes are full of flavor and are a great way to use leftover ham.
