This week it is all about plant-based meals for one. I was so excited to try this challenge, and you know what I did not miss the meat at all! Using Chickpeas Black Beans and Lentils worked so well, and I will be making these recipes on repeat! I really enjoyed all 5 of these meals and I hope you will too!

Black Beans Tostadas for One
Ingredients
- 1 c Black Beans warmed
- ½ t Taco Seasoning
- Juice of ½ lime
- Tostada Shell
- Toppings: Smashed Avocado and Pico De Gallo
Instructions
- Smash black beans with the taco seasoning and the juice of a lime.
- On a Tostada Shells spread the black bean mixture on top of the shell.
- Top with smashed avocado and Pico de Gallo.
- Enjoy!
Pico de Gallo for One
Ingredients
- ½ c Diced Tomatoes
- 2 t Diced Jalapeno
- 1 T Diced Red Onion
- Juice of ½ Lime
- ¼ t Pepper
- 1/8 t Salt
- ¼ t Minced Garlic
- 1/8 t Cilantro OR Parsley Flakes
Instructions
- Combine all ingredients and store in an airtight container.
- Enjoy!
Crockpot Black Bean Fiesta Soup for One
Ingredients
- ½ c Black Beans
- ¼ c Frozen Corn
- ¼ c Diced Tomatoes
- ¼ c Diced Red Pepper
- 2 T Diced Onion
- ½ t Diced Jalapenos
- 1 t Taco Seasoning
- 1.5 c Vegetable Broth
Instructions
- Add all ingredients to the crockpot and cook on High for 2 Hours OR on Low for 4 Hours.
- Enjoy!
Crockpot Chicken Coconut Curry
Ingredients
- 1 c Chickpeas that have been drained and rinsed
- ½ t Minced Ginger
- ½ t Minced Garlic
- ¼ t Curry, Coriander, Turmeric, and Red Pepper Flakes Double all of these for a spicier curry.
- 2 T Diced Red Peppers
- 2 T Diced Tomatoes
- 1 T Diced Red Onion
- Juice of ½ of a lime
- 1/2 C Coconut Milk
Instructions
- Place all ingredients in the crockpot and cook on low for 4 hours. Serve over rice.
Vegetarian Greek Pasta Salad
Ingredients
- ½ c Chickpeas Rinsed and Drained
- 4 oz of Protein Pasta Cooked And Drained
- 1 T Chopped Pepperoncini Peppers
- 1 T Diced Red Onion
- 2 T Cucumbers
- 2 T Diced Tomatoes
- ¼ c Chopped Purple Cabbage
- 2 T Kalamata Olives
Instructions
- Combine all ingredients and toss with Greek Salad Dressing (2 T Olive Oil 1 T Red Wine Vinegar, 1 t Greek Seasoning Blend).
- Enjoy!
This was such a fun experiment friend! I loved all 5 of these recipes and did not miss the meat and potatoes at all! Vegatarian friends you are on to something, this was delicious!
