Crockpot Chicken Coconut Curry

This delicious chickpea dish can be mild or double the spice measurements for a little kick. Serve over rice or cauliflower rice.

Ingredients
  

  • 1 c Chickpeas that have been drained and rinsed
  • ½ t Minced Ginger
  • ½ t Minced Garlic
  • ¼ t Curry, Coriander, Turmeric, and Red Pepper Flakes Double all of these for a spicier curry.
  • 2 T Diced Red Peppers
  • 2 T Diced Tomatoes
  • 1 T Diced Red Onion
  • Juice of ½ of a lime
  • 1/2 C Coconut Milk

Instructions
 

  • Place all ingredients in the crockpot and cook on low for 4 hours. Serve over rice.
