Shrimp Scampi with Cauliflower and Asparagus

Ingredients
  

  • Frozen Shrimp The number will change depending on the size of shrimp you are choosing and the number of people you are cooking for. Go by the serving size suggestion of the package directions.
  • ½ c Melted Butter
  • 3 Cloves Minced Garlic
  • Juice of ½ of Lemon
  • 1 t Parsley
  • 1 c Chopped Cauliflower
  • 1 c Asparagus

Instructions
 

  • Thaw Shrimp in cool water.
  • Chop veggies and coat in olive oil and House Seasoning and place on sheet pan.
  • Place shrimp in melted butter. Add minced garlic ,parsley and lemon juice to the shrimp.
  • Place on sheet pan with veggies.
  • Bake at 375 for 20 minutes.
  • Enjoy!

Sheet Pan Lasagna

Ingredients
  

  • 10 Frozen Cheese Ravioli per person
  • 2 c Marinara Sauce
  • 1 c Italian Cheese Blend
  • 1 c Ricotta or Cottage Cheese
  • ½ t Basil
  • ½ t Oregano
  • 1/8 t Salt
  • 1/8 t Pepper
  • 1 Clove of Minced Garlic

Instructions
 

  • Place one cup of sauce on sheet pan
  • Place Ravioli on top of sauce.
  • Combine ricotta (or cottage cheese) basil, oregano, salt, pepper and garlic.
  • Place Ricotta mixture on top of Ravioli
  • Top with the remailing Marinara Sauce then the Italian cheese.
  • Bake at 350 for 30 minutes
  • Enjoy!

Sheet Pan Low Country Boil

Ingredients
  

  • 1 T Oil
  • 2 T Melted Butter
  • 1 T Creole Seasoning
  • 1 T Lemon Juice
  • 1 t Parsley
  • 2 c Potatoes cubed or cut into small spears
  • 2 Ears of corn cut into thirds
  • 20 Shrimp This may vary depending on the size of the shrimp you choose. Go by the package directions and use the number of shrimp for 2 servings.
  • 1 c Sliced smoked sausage

Instructions
 

  • Spray Olive oil for Sheet pan.
  • Combine olive oil, creole seasoning and the butter
  • Place potatoes, corn and sausage in a bowl and top with 1/2 of the creole seasoning and melted butter
  • Then place on the sheet pan and bake at 425 for 20 minutes
  • While the potatoes, corn and sausage are baking, coat shrimp with the remaining creole seasoning and the melted butter.
  • After the potatoes, corn and sausage have cooked for 20 minutes remove from the oven and add the shrimp to the hot pan.
  • Place it back into the oven for 10 more minutes until the shrimp is cooked through.
  • Once everything is cooked squeeze the lemon on top and sprinkle with the parsley
  • Enjoy!

Parmesan Chicken with Sweet Potatoes and Green Beans

Ingredients
  

  • Italian Dressing for Marinade
  • 2 Chicken Breasts
  • 1 T Grated Parmesan
  • 2 T Panko Breadcrumbs
  • 2 c Diced Sweet Potatoes You can find prepped sweet potatoes in the freezer section of your grocery store
  • 2 c Green Beans

Instructions
 

  • If you have time marinade your chicken breasts for 30 minutes to 2 hours
  • Place potatoes and green beans on the sheet pan and season with spray olive oil and house seasoning blend.
  • Place Chicken on sheet pan and cook for 20 minutes at 425
  • Remove the sheet pan and top the chicken with the panko and parmesan cheese
  • Bake at 425 for another 10 minutes
  • Enjoy!

Sheet Pan Sausage and Peppers

Ingredients
  

  • 2-4 Sausage Links
  • 2 c Peppers and Onion You can find prepped peppers and onions in the freezer section of your grocery store
  • 1 c Sliced Mushrooms
  • 1 can Rotel Diced Tomatoes
  • 1 T Greek Seasoning Blend
  • 1 T Red Wine Vinegar
  • 2 T Olive Oil

Instructions
 

  • Combine all veggies in a bowl and add the oil, vinegar and seasonings to the bowl and stir to combine
  • Lay onto the sheet pan and the top with the Sausage Links
  • Bake at 400 for 20-25 minutes
  • Serve in a bowl or on a Hoagie Roll.
  • Enjoy!

These dinners are all quick to prepare, very flavorful, but the best part is minimal cleanup.
