Hi friend! Today we are making breakfast, lunch, and dinner in a rice cooker — all perfectly portioned for one person. Whether you’re in a dorm, working with a tiny kitchen, or just love small‑batch cooking, these recipes are easy, budget‑friendly, and delicious.

For breakfast we will be making a Ham and Cheese Breakfast Casserole. Soft cubes of bread soak up a rich mixture of eggs and milk, then bake up fluffy and golden with melty cheese and savory bites of ham throughout. You can prep this the night before or the day of for a hearty breakfast.

For lunch we will be making a White Chicken Chili. A cozy, bright, and comforting white chicken chili made with chicken, creamy cannellini beans, and a mild salsa verde that brings just the right amount of tang and heat. It is a delicious lunch that will keep you full and satisfied until your evening meal.

Super or dinner? No matter which term you use our supper tonight is a scrumptious one! A bright, fresh salmon dish served with a fluffy quinoa salad and a silky lime‑avocado dressing. The salmon sits in our steaming tray and is finished the same time as our quinoa, then we will add fresh veggies and brighten the entire dish before adding our creamy lime avocado dressing.

Rice Cooker Ham and Cheese Breakfast Casserole

Softcubes of bread soak up a rich mixture of eggs and milk, then bake up fluffy andgolden with melty cheese and savory bites of ham throughout. You can prep thisthe night before or the day of for a hearty breakfast.

Ingredients
  

  • 1 Hamburger Bun Cubed
  • 1/4 lb Diced Ham
  • 1/3 c Shredded Cheese
  • 1/2 c Milk
  • 1 Egg
  • 1/8 t Salt
  • 1/8 t Pepper

Instructions
 

  • In a bowl combine milk, the egg, cheese, salt and pepper and place the cubed bun in to soak
  • Soak for a few minutes while you dice your ham (5-10 minutes)
  • Add your ham and stir to combine
  • Place in the rice cooker. You can either line the rice cooker with parchment paper or oil the sides of your rice cooker. Note if you use parchment paper you may have a longer cooking time but it will be easier to remove from the rice cooker.
  • Cook on the white rice setting and allow it to stay on keep warm for 5-10 minutes
  • Check the casserole fand if needed run another white rice cycle.
  • Enjoy!

Rice Cooker White Chicken Chili for One

A cozy, bright, and comforting white chicken chili made with chicken, creamy cannellini beans, and a mild salsa verde that brings just the right amount oftang and heat.

Ingredients
  

  • 1 c Chicken Broth
  • 1 t Taco Seasoning
  • 1 Garlic Clove Minced
  • 1 T Heavy Cream
  • 1 Chicken Breast Diced
  • 1/2 c Cannellini Beans
  • 2 T Salsa Verde or Mild Green Chiles
  • 2 T Diced Onions
  • Oil

Instructions
 

  • Add a little taco seasoning to the chicken
  • Using the steam function on the rice cooker cook the chicken and the onions using a little oil to prevent sticking.
  • Saute the onions and the chicken for 3-4 minutes then turn off the steam function
  • Add the remaining ingredients except the heavy cream
  • Cook on Steam for 5 minutes
  • Turn off the rice cooker and once the soup stops boiling add the heavy cream
  • Stir to combine
  • Top with avocado, sour cream, cheddar cheese or tomatoes

Salmon Quinoa Salad with Lime Avocado Dressing

Ingredients
  

  • 1/2 c Quinoa
  • 1 c Chicken Broth
  • 4 oz Salmon Fillet
  • 1/2 c Cherry Tomatoes halved
  • 1 c Spinach
  • 1 T Diced Purple Onion
  • 1/2 c Diced Cumber
  • 1/2 Lime Juiced
  • 3 T Olive Oil
  • 3 T Water
  • 1/2 Avocado
  • 1/8 t Salt
  • 1/8 t Pepper
  • House Seasoning to coat the salmon
  • Honey or Maple Syrup if needed

Instructions
 

  • Place the quinoa, and chicken broth into the rice cooker.
  • Place salmon into the steamer basket and season with House Seasoning
  • Place a slice of lime on top of the salmon
  • Cook on the white rice setting
  • While the quinoa and salmon are cooking make your dressing by blending water, lime juice, oil, salt and pepper. Do a taste test and if it needs any sweetness add a dash of honey or maple syrup. I personally do not think it needs any sweetness but if you do feel free to add sweetner.
  • Once the cooking is complete remove and flake the salmon and fluff the quinoa
  • Add the tomatoes, purple onion and cucumber to the quinoa and stir to combine.
  • Top with dressing and flaked salmon
  • Enjoy!

Taco Seasoning Blend

  • 1 T Chili Powder
  • 1 T Cumin
  • 1/2 t Salt Pepper, Paprika, Garlic Powder, Onion Powder, and Oregano
  • 1/4 t Pepper Flakes

  • Combine all seasonings and place in an airtight container.

House Seasoning Blend
