Spinach Dip Chicken over Orzo

Ingredients
  

  • ¼ c Spinach Dip
  • 1/2 c Orzo
  • 2 c Chicken Broth
  • 2 Chicken Breasts
  • 1 t Greek Seasoning Blend
  • ¼ c Shredded Parmesan Cheese
  • 1/2 c Chopped Spinach
  • 1 Clove of Garlic Minced
  • Wedge of Lemon

Instructions
 

  • Season chicken with the Greek Seasoning Blend
  • Sauté chicken and set aside
  • Deglaze the pan with 2 c Chicken Broth
  • Add garlic and orzo
  • Cook for 10 minutes until the orzo is al dente
  • Stir orzo and add chopped spinach
  • Put chicken back into the pan, along with any pan juices on the plate from the chicken.
  • Top the chicken with Spinach Dip and Parmesan
  • Cover and continue to cook until the Orzo is tender
  • Once Orzo is cooked squeeze the wedge of lemon over the top of the chicken.
  • Enjoy!

Creamy Italian Shrimp over Zoodles (Zucchini Noodles)

Ingredients
  

  • 2 Servings of Frozen Shrimp thawed this number will vary depending on the size of shrimp you are using. Check the serving size on the back of the package and thaw 2 servings.
  • 1 Package 5.3 oz of Garlic and Herb Boursin Cheese
  • 1 pint Cherry Tomatoes
  • ¼ c Olive Oil
  • 1 Garlic Clove Minced
  • 1 cup Zoodles (Zucchini Noodles)
  • ½ c Water
  • 1/3 c Parmesan Cheese
  • Optional 1 c Chopped Asparagus
  • Salt and Pepper

Instructions
 

  • In a 9x 13 pan place cherry tomatoes around the outside and place the Boursin cheese in the center of the pan.
  • Top with 2 T olive oil and salt and pepper
  • Bake at 425 for 20 minutes
  • Toss the shrimp in the remaining olive oil and salt and pepper
  • After 20 minutes add the shrimp to the tomatoes and Boursin pan and, if using add the asparagus, and continue to cook for 10 more minutes
  • Once the shrimp and asparagus are cooked through remove from the oven and add 1/4 c Water and stir everything together
  • Top with parmesan cheese
  • Serve over zoodles.
  • Enjoy!

Cajun Kielbasa with Gnocchi

Ingredients
  

  • 1 T Oil
  • 2 T Melted Butter
  • 1 T Creole Seasoning
  • ½ Lemon
  • 1 t Parsley
  • 2 c Cooked Gnocchi
  • 2 Ears of Corn cut into thirds
  • 2 c Sliced Smoked Sausage

Instructions
 

  • Grease the sheet pan.
  • Mix together melted butter, creole seasoning and the oil
  • Place corn and sausage in a bowl and top with ½ of the creole seasoning/oil mixture
  • Then place on the sheet pan and bake at 425 for 15 minutes
  • After 15 minutes add cooked gnocchi to the pan top with the remaining creole seasoning/oil mixture
  • Place it back into the oven for 5 more minutes
  • Once everything is cooked squeeze the lemon on top and sprinkle with the parsley
  • Enjoy!
