This week I am making Jerk Pork Chops with Mango Salsa. I served this with Saffron Rice and Sautéed Zucchini.

Jerk Pork Chops
This recipe is for pork chops, but it easily varies to include chicken or tenderloin as well. Be sure to top it with the Mango Salsa
Ingredients
- 4 Pork Chops
- 1 T Jerk Seasoning
- 1 T Olive Oil
- 1/4 C Orange Juice
Instructions
- Combine the juice, olive oil and the jerk seasoning blend.
- Coat the pork chops and set to the side while you make the Mango Salsa (recipe below)
- Sauté in a pan for 5 minutes on each side or until the internal temperature is 160.
- Allow to rest for 5 minutes and serve.
- Enjoy!
Mango Salsa
Ingredients
- 2 Mangos Cubed
- 1 Red Pepper Diced
- 1 Jalapeno Pepper Diced
- 1 Tomato Diced
- ¼ c Diced Red Onion
- Juice of 1 Lime
- ½ T Parsley Flakes
Instructions
- Combine all ingredients in a bowl and stir to combine.
- Serve over the pork chops, chicken or as a salsa on a chip.
- Enjoy!
Notes
You can use frozen mango chunks. Simply substitute 2 Cups of frozen mango chunks diced for the fresh mangos.
