Freezer Foraging Dinner: Korean Beef & Lentil Tacos

There’s something so satisfying about a little freezer foraging, especially on those nights when you want dinner to be easy but still delicious. While digging through my freezer, I found a bag of cooked lentils and a half pound of ground beef—such a simple combo, but instantly I knew exactly what it needed to become, Korean Beef and Lentil Tacos. These tacos come together fast, stretch your ingredients in the best way, and turn those forgotten freezer finds into a simple, flavor-packed meal.

If you have never cooked with lentils before this is such a great recipe to try them. You can even start with a can of lentils so you don’t even need to cook them. They are so versatile and a great way to stretch your protein budget.

Korean Beef & Lentil Tacos for Two

Ingredients
  

  • 1 c Shredded Cabbage or Cole Slaw Mix for Taco Topping
  • 4 Corn or Flour Tortillas
  • 1 c Cooked Lentils
  • ½ lb Ground Beef
  • 2 T Brown Sugar
  • 2 T Soy Sauce
  • 1 T Sesame Oil
  • 1/2 t Freshly Grated Ginger
  • 1/2 t Garlic one Minced Garlic Clove
  • 1/4 t Crushed Red Pepper Flakes
  • Any additional taco toppings such as pickled red onions, Yum Yum Sauce or a sliced avocado

Instructions
 

  • Brown the ground beef in a pan. Once it’s browned add the cooked lentils to the pan
  • Combine Brown Sugar, Soy Sauce, Sesame Oil, Ginger, Garlic, and the Crushed Red Pepper Flakes to make the sauce.
  • Add sauce to the pan and stir to combine.
  • Simmer until the sauce has reduced
  • Build your tacos, adding any additional toppings
  • Enjoy!
