Labor Day usually means firing up a massive outdoor grill and ending up with a week’s worth of leftovers, but you don’t need a huge crowd to enjoy a full holiday spread. Today, we’re making a complete Small Batch Labor Day Picnic Menu for Two, featuring three varieties of quick Air Fryer Kabobs—Creole Shrimp, Italian Sausage, and Chicken Teriyaki. Paired with an elote corn dip and a fresh, creamy cucumber salad, this entire menu gives you all that big holiday flavor with zero grill prep and zero food waste.

Cucumber Ranch Salad
Ingredients
- 1 Cucumber thinly sliced
- 1-2 T Thinly Sliced Onion
- 1 T Cream Cheese
- 1 t Ranch Seasoning
Instructions
- Mix all ingredients and enjoy!
Elote Corn Dip
Ingredients
- 12 oz Bag of Thawed Frozen Corn you can use 2 cups of drained canned corn as well
- 2 T Mayo
- 2 T Parmesan Cheese
- 1 T Tijan
- Juice of a Lime
- Parsley to sprinkle on top
Instructions
- Mix all ingredients in a bowl and top with a sprinkling of parsley.
- Enjoy!
Air Fryer Greek Sausage Kabobs
Ingredients
- 2 Sausage Links sliced in coins
- Red Pepper
- Onion
- Pineapple Chunks
- Zucchini
- 2 T Olive Oil
- 1 T Red Wine Vinegar
- 1/2 T Greek Seasoning Blend
Instructions
- Soak skewers in water for 30 minutes
- Create marinade by combining the Greek seasoning blend, vinegar and olive oil
- Toss sausage in the marinade
- Chop the pepper and onion into large chunks and slice zucchini into coins
- Drain the canned pineapple
- On a skewer layer the veggies, sausage and pineapple
- Continue creating skewers until you have used all of the veggies and sausage
- Air Fry at 385 for 10-12 minutes
- Enjoy!
Greek Seasoning Blend
Ingredients
- 2 T Oregano
- 2 T Basil
- 1 T Garlic Powder
- 1 T Onion Powder
- 1 t Salt
- 1 t Pepper
Instructions
- Combine all spices and store in an airtight container.
Air Fryer Teriyaki Chicken Kabobs
Ingredients
- ½ lb Chicken Breasts Cubed
- Red Pepper
- Onion
- Zucchini
- Pineapple Chunks
- 1 T Soy Sauce
- 1 T Brown Sugar
- 2 T Olive oil
- 1 t Ground Ginger
- 1 t Garlic Powder
Instructions
- Create marinade by combining the brown sugar, brown sugar, ginger, garlic and olive oil
- Toss chicken in the marinade
- Chop the pepper and onion into large chunks and slice zucchini into coins
- Drain the canned pineapple
- On a skewer layer the veggies, chicken and pineapple
- Continue creating skewers until you have used all of the veggies and sausage
- Air Fry at 385 for 10-12 minutes
- Enjoy!
Air Fryer Creole Shrimp Kabobs
Ingredients
- 20 Large Shrimp if using frozen shrimp, defrost the shrimp
- ½ T Creole Seasoning
- 2 T Olive Oil
- Red Pepper
- Onion
- Zucchini
- Pineapple Chunks
Instructions
- Create marinade by combining the creole seasoning and olive oil
- Toss the shrimp in the marinade
- Chop the pepper and onion into large chunks and slice zucchini into coins
- Drain the canned pineapple
- On a skewer layer the veggies, shrimp and pineapple
- Continue creating skewers until you have used all the veggies and sausage
- Air Fry at 385 for 10-12 minutes
- Enjoy!
Creole Seasoning Blend
Ingredients
- 2 T Paprika
- 2 t Garlic Powder
- 2 t Onion Powder
- 1 t Oregano
- 1 t Basil
- 1 t Chili Powder
- ½ t Salt
- ½ t Pepper
- ¼ t Red Pepper Flakes
- ¼ t Cayenne Pepper
Instructions
- Combine all spices and store in an airtight container.
