Fresh and Bright Egg Rolls
Ingredients
- 12 Small Cooked Shrimp
- ¼ c Chopped Cabbage
- ¼ c Chopped Kale
- ½ Carrot Julienned
- ½ Cucumber Julienned
- ¼ c Diced Red Pepper
- ½ Avocado
- Pinch of Salt
- 1/4 t Rice Vinegar
- 1/4 t Sesame Oil
- Wedge of Lime
- 4 Rice Paper Spring Roll Wrappers
- Warm Water
Instructions
- In a bowl add the juice of the lime wedge, kale, cabbage, pinch of Salt, vinegar and sesame oil and stir to combine
- Soften one of the spring roll wrappers in the warm water
- Lay spring roll wrapper onto your cutting board and add the shrimp then the vegetables
- Fold the bottom corner over your ingredients then tuck the sides in and roll
- Continue to make your other three egg rolls the same way
- Serve and Enjoy!
BBQ Egg Rolls
Ingredients
- Egg Roll Wrappers
- 2 c BBQ
- ½ c Pimento Cheese or you can do a spread of cream cheese with a sprinkle of cheddar cheese
- Water to seal you Egg Roll Wrapper
Instructions
- Lay your egg wrapper onto your cutting board
- Spread 1 T of pimento cheese in the center of your eggroll wrapper, leaving space around the edges
- Layer 2 T of BBQ on top of the pimento cheese
- Fold up the bottom of the wrapper, then fold in the sides and roll it up leaving a triangle at the top
- Brush water onto the triangle piece and finish rolling, sealing the edges of the triangle to the egg roll.
- Set on a parchment lined baking sheet
- Once you have rolled all of your egg rolls, either cook fresh or freeze.
- To freeze , place the egg rolls onto a parchment paper lined baking sheet making sure the egg rolls are not touching. Once the egg rolls have frozen solid, place into a freezer bag.If you are cooking these fresh either fry in a pan of oil until the egg rolls are browned on both sides or Air Fry at 400 degrees for 8-10 minutes flipping the egg rolls at the 5-minute mark.
- If you are cooking these from frozen, thaw on the counter for 30 minutes OR air fry at 325 for 3 minutes then bump up the temperature to 400 and cook for 8-10 more minutes, flipping halfway through the cooking time.
- Once the egg rolls have cooled slightly Enjoy
Southwest Egg Rolls
Ingredients
- Egg Roll Wrappers
- 1 C Cooked Chicken Breast seasoned with 1 t Taco Seasoning
- 1 t Diced Jalapeño
- ¼ c Black Beans
- ¼ c Corn
- 1 T Diced Red Onion
- ¼ c Diced Red Pepper
- ¼ c Shredded Cheese
Instructions
- In a bowl add all ingredients and stir to combine
- Lay your egg wrapper onto your cutting board
- Spread ¼ c of the chicken mixture in the center of your eggroll wrapper, leaving space around the edges
- Fold up the bottom of the wrapper, then fold in the sides and roll it up leaving a triangle at the top
- Brush water onto the triangle piece and finish rolling, sealing the edges of the triangle to the egg roll.
- Set on a parchment lined baking sheet
- Once you have rolled all of your egg rolls, either cook fresh or freeze.

Ingredients
- 3 T Olive Oil
- 3 T Water
- 2 T Lime Juice
- 1 Small Avocado or ½ of a large avocado
- 1 T Sour Cream
- 1/8 t Salt
- 1/8 t Pepper
- 1/8 t Cumin
Instructions
- Blend all the ingredients until smooth, adding more water for your desired consistency.
- Enjoy!
Spring Rolls
Ingredients
- Spring Roll Pastry
- ½ lb Browned Ground Beef ground chicken or turkey will work here as well
- 2 T Cabbage
- Maifun Rice Sticks
- 1 Carrot Julienned
- 1 t Sesame Oil
- 1 t Soy Sauce
- 1 t Rice Vinegar
- ¼ t Garlic Powder
- ¼ t Ground Ginger
- 1/8 t Salt
- 1/8 t Pepper
- Water
Instructions
- In a bowl season the ground beef with salt, pepper, ginger, garlic, sesame oil, rice vinegar, and soy sauce
- Rehydrate one section of the rice sticks in a pot of warm water
- Once your rice sticks are rehydrated cut them into smaller pieces
- Add the ingredients to a bowl and stir to combine
- Place the spring roll pastry on the cutting board
- Add 2 T of the ground beef mixture to the spring roll pastry
- Fold up the bottom of the wrapper, then fold in the sides and roll it up leaving a triangle at the top
- Brush water onto the triangle piece and finish rolling, sealing the edges of the triangle to the egg roll.
- Set on a parchment lined baking sheet
- Once you have rolled all your spring rolls, either cook fresh or freeze.
