Instant Pot Spaghetti Squash Ragu for Two
Ingredients
- 1 Garlic Clove
- 1/2 Onion Diced
- 1 Carrot
- 1 Celery Stalks
- 1 T Olive Oil
- ¼ c Wine Red or White will work here
- 1 c Beef or Vegetable Broth
- 1 T Tomato Paste
- 1 28 oz can of Crushed Tomatoes
- 1/2 lb Ground Beef
Instructions
- Chop Veggies and cook in the olive oil until translucent.
- Push Veggies to the side of pan and brown ground beef.
- Add all other ingredients and simmer for 10 minutes while your Spaghetti Squash is cooking in the Instant Pot.
- To cook your spaghetti squash in the Instant Pot, cut the squash in half and take the seeds and pulp out.
- Salt and Pepper the inside of the squash and cook on High Pressure for 9 minutes (be sure to add one cup of water to the instant pot).
- After the cooking cycle has completed, let the instant pot naturally release for 10 minutes, and then release the steam
- Serve with the ragu inside the spaghetti squash and top with parmesan cheese if desired.

Butternut Squash Sheet Pan Meal
Ingredients
- 1 c Chopped Butternut Squash
- 1 c Chopped Brussel Sprouts
- 1 c Chopped Sweet Potatoes
- ¼ c Feta Cheese
- 2 T Chopped Walnuts
- 1 Clove Garlic minced
- 1/8 t Salt
- 1/8 t Pepper
- ¼ t Smoked Paprika
- ¼ c Olive Oil
- 2 Chicken Apple Sausage Links
- Optional Honey to Drizzle at the end of Cooking
Instructions
- Slice sausage into coins and place in a bowl with the chopped veggies, olive oil, salt, pepper and paprika
- Spread onto a sheet pan and bake at 425 for 20-25 Minutes, at the 10 minute mark remove from the oven and flip your sausage and veggies to prevent sticking.
- Remove from the oven and add the feta cheese and walnuts and drizzle with the honey.
- Enjoy
Air Fryer Stuffed Acorn Squash For Two
Ingredients
- 2 Acorn Squash halved and seeds and pulp removed
- ½ lb Browned Italian Sausage
- 2 T Diced Red Pepper
- 2 T Diced Onions
- 2 T Diced Tomato
- 1 Small Zucchini Diced
- ¼ c Shredded Parmesan
- 1 Egg
- 1 t Basil
- 1/8 t Salt
- 1/8 t Pepper
Instructions
- Spray the Squash with an Olive Oil Spray and sprinkle with Salt and Pepper
- Bake in the Air Fryer at 375 for 15 minutes
- While your acorn squash is baking in the air fryer, cook your veggies and sausage.
- Once your sausage and veggies are cooked, temper your eggs by adding the warm mixture to the eggs bringing them up to temperature.
- Once your eggs are warm add this mixture to the sausage and veggies mixture.
- Add this mixture to the inside of your acorn squash
- Bake at 375 for 10 minutes
- Top with parmesan cheese and bake for another 5 minutes
- Enjoy!
