Instant Pot Spaghetti Squash Ragu for Two

Ingredients
  

  • 1 Garlic Clove
  • 1/2 Onion Diced
  • 1 Carrot
  • 1 Celery Stalks
  • 1 T Olive Oil
  • ΒΌ c Wine Red or White will work here
  • 1 c Beef or Vegetable Broth
  • 1 T Tomato Paste
  • 1 28 oz can of Crushed Tomatoes
  • 1/2 lb Ground Beef

Instructions
 

  • Chop Veggies and cook in the olive oil until translucent.
  • Push Veggies to the side of pan and brown ground beef.
  • Add all other ingredients and simmer for 10 minutes while your Spaghetti Squash is cooking in the Instant Pot.
  • To cook your spaghetti squash in the Instant Pot, cut the squash in half and take the seeds and pulp out.
  • Salt and Pepper the inside of the squash and cook on High Pressure for 9 minutes (be sure to add one cup of water to the instant pot).
  • After the cooking cycle has completed, let the instant pot naturally release for 10 minutes, and then release the steam
  • Serve with the ragu inside the spaghetti squash and top with parmesan cheese if desired.
