Air Fryer Stuffed Acorn Squash For Two

Ingredients
  

  • 2 Acorn Squash halved and seeds and pulp removed
  • ½ lb Browned Italian Sausage
  • 2 T Diced Red Pepper
  • 2 T Diced Onions
  • 2 T Diced Tomato
  • 1 Small Zucchini Diced
  • ¼ c Shredded Parmesan
  • 1 Egg
  • 1 t Basil
  • 1/8 t Salt
  • 1/8 t Pepper

Instructions
 

  • Spray the Squash with an Olive Oil Spray and sprinkle with Salt and Pepper
  • Bake in the Air Fryer at 375 for 15 minutes
  • While your acorn squash is baking in the air fryer, cook your veggies and sausage.
  • Once your sausage and veggies are cooked, temper your eggs by adding the warm mixture to the eggs bringing them up to temperature.
  • Once your eggs are warm add this mixture to the sausage and veggies mixture.
  • Add this mixture to the inside of your acorn squash
  • Bake at 375 for 10 minutes
  • Top with parmesan cheese and bake for another 5 minutes
  • Enjoy!
