3 Easy Air Fryer Recipes for One (Breakfast, Lunch, Dinner)

Cooking for one doesn’t have to mean boring meals, tons of leftovers, or complicated recipes. Today I’m sharing three easy air fryer recipes for one — a full day of simple, delicious meals you can make with minimal ingredients and almost no cleanup. Whether you’re a busy professional, a solo home cook, or just someone who loves small‑batch meals, these recipes are designed to fit your life.

The air fryer is one of my favorite tools for solo cooking because it heats fast, cooks evenly, and makes small portions feel effortless. In this post, we’ll walk through a quick breakfast, a flavorful lunch, and a cozy dinner you can whip up any day of the week.

Air Fryer Bagels for One

Ingredients
  

  • ½ c Greek Yogurt
  • ½ c Self Rising Flour
  • Optional toppings: Everything but the Bagel Seasoning Asiago Cheese, Parmesan Cheese

Instructions
 

  • Combine the flour and Greek yogurt and mix until it becomes a ball.
  • Knead the dough for a minute or two until it starts to get smooth and “toughen up”
  • Divide the dough into two and shape into your bagel
  • Sprinkle the optional topping on top. If it is not sticking, brush with a little water to help it stick
  • Bake in the Air Fryer 10-12 minutes flipping after 8 minutes
  • Allow to cool slightly and slice.
  • Add your favorite bagel toppings and enjoy!

Air Fryer Shrimp Scampi and Asparagus

Ingredients
  

  • 10 Large Frozen Shrimp thawed
  • Air Fryer Asparagus from the Freezer Section
  • 3 T Butter
  • 1 t Parsley
  • 1 Garlic Clove minced
  • 1 Wedge of Lemon

Instructions
 

  • Place the shrimp, butter, garlic and parsley in an oven safe dish that fits in to your Air Fryer and cover it with foil.
  • Place scampi in the air fryer and place asparagus around the dish
  • Air Fry at 385 for 10 minutes
  • After 10 minutes remove the foil and check to see if the shrimp has cooked completely. If you need a few more minutes you can put it back in the air fryer for another two minutes, but be sure to listen and make sure it isn’t splattering too much.
  • Squeeze the lemon wedge over the scampi-be sure to catch any seeds.
  • Serve and Enjoy!

Air Fryer Feta Chicken

Ingredients
  

  • 1 Chicken Breast
  • 1 T Sundried Tomatoes
  • 1 T Chopped Kalamata Olives
  • 1 T Chopped Green Olives
  • 2 Ounces Feta Cheese
  • ¼ c Olive Oil
  • 1 T Greek Seasoning Blend
  • 1 C Chopped Cauliflower
  • Side Salad

Instructions
 

  • Mix the olive oil and Greek seasoning blend
  • Pour 1 T of the olive oil mixture over the chicken breast
  • Place the chicken breast and chopped cauliflower into the Air Fryer
  • Air Fryer at 380 for 12-14 Minutes, flipping at the 6-minute mark
  • Once you have flipped the chicken at the 6-minute mark, top with the feta cheese, sundried tomatoes and olives and 2 T of the olive oil mixture covering the cauliflower as well as the chicken.
  • Air Fry the remaining 6 minutes. Check the temperature and continue to cook if your chicken has not reached 165 degrees.
  • Serve and Enjoy!

Greek Seasoning Blend

This Greek seasoning blend is great as a salad dressing seasoning, a vegtable seasoning or on chicken.

Ingredients
  

  • 2 T Oregano
  • 2 T Basil
  • 1 T Garlic Powder
  • 1 T Onion Powder
  • 1 t Salt
  • 1 t Pepper

Instructions
 

  • Combine all spices and store in an airtight container.
