3 Simple Pasta Recipes for Two without Tomato Sauce

One of my favorite tomato free pasta dishes is Ina Garten’s Lemon Fusilli with Arugula recipe. The Barefoot Contessa always has the best recipes and this one is a keeper!

Here are the simple recipes that I’ve created for you.

Cacio E Pepe

Ingredients
  

  • 2 c Cooked Spaghetti Noodles *reserve 1 c of the pasta water after cooking
  • 1 c Pasta Water
  • 1 c Grated Parmesan Cheese
  • ¼ t Black Pepper
  • 2 T Butter

Instructions
 

  • Melt butter in a pan and then add the pepper
  • Add 2 T of the pasta water to the butter
  • Add spaghetti to the pan and alternate adding parmesan cheese and pasta water 2 T at a time until the pasta water and parmesan have all been added to the pan
  • Serve and Enjoy!

Notes

You can also make this where you would mix the cheese, pepper and pasta water together to make a cheese sauce and then add that to the pan with the melted butter and spaghetti noodles.

Simple Fettuccine Alfredo for Two

Ingredients
  

  • ½ c Heavy Cream
  • 1 c Milk
  • 2 Garlic Cloves Minced
  • 2 T Butter
  • 1 c Parmesan Cheese
  • 1/8 t Pepper
  • 1/8 t Salt
  • ½ t Greek Seasoning Blend
  • 2 cups Fettuccine Noodles

Instructions
 

  • Cook the Fettuccine Noodles according to the package directions and drain.
  • In the warm pan place butter and the 2 cloves of garlic
  • Add in salt, pepper, and Greek seasoning blend
  • Add the milk and the heavy cream, gradually warming the milk and cream up
  • Add half of the parmesan cheese and bring up to a simmer
  • Simmer the sauce until it has reduced by half
  • Add the cooked noodles and the remaining parmesan in to the sauce and stir to combine
  • Continue to simmer until the sauce is thickened.
  • Serve and Enjoy

Notes

You can serve this with Air Fryer Chicken Breasts
Simply top chicken breasts with oil and Greek Seasoning Blend
Cook at 380 for 12-14 minutes, flipping it halfway through your cooking time

Greek Seasoning Blend

This Greek seasoning blend is great as a salad dressing seasoning, a vegtable seasoning or on chicken.

Ingredients
  

  • 2 T Oregano
  • 2 T Basil
  • 1 T Garlic Powder
  • 1 T Onion Powder
  • 1 t Salt
  • 1 t Pepper

Instructions
 

  • Combine all spices and store in an airtight container.
