Each recipe is portioned for 2 servings — easy to make, satisfying to eat, and ideal for busy weeknights or relaxed weekends. All these casseroles freeze beautifully and I will show you have to freeze each of these casseroles. These 5 casseroles are so versatile you could have one every weeknight this week!

2 Serving Breakfast Casserole

Ingredients
  

  • ¼ lb Cooked Sausage
  • 2 Eggs
  • 2 T Diced Onion
  • 2 T Diced Pepper
  • ¼ c Milk
  • 1/2 c Shredded Cheese
  • 1 c Shredded Hashbrowns
  • 1 t House Seasoning

Instructions
 

  • Preheat oven to 375
  • Grease pan.
  • Combine all ingredients, reserving half of the cheese for the top.
  • Add mixture to the greased pan, and top with the remaining cheese.
  • Cover and bake at 375 for 30 minutes
  • Uncover and bake for another 5-10 minutes
  • Enjoy!

Chicken Tetrazzini for Two

Ingredients
  

  • 4 oz Cooked Spaghetti Noodles
  • 4 T Cream Cheese
  • 1 T Butter
  • 2 T Diced Celery
  • 2 T Diced Onions
  • 2 T Diced Chopped Mushrooms
  • 1 T Diced Olives
  • 1 Garlic Clove Minced
  • 1 c Chicken Broth
  • 2 T Panko
  • 1 c Cooked Chicken Chopped
  • 2 Pieces Cooked Bacon Chopped
  • ½ c Shredded Parmesan Cheese

Instructions
 

  • Preheat oven to 350
  • Sautee veggies in the butter.
  • Add cream cheese and stir continually until it’s melted
  • Add chicken broth
  • Add the remaining ingredients except the Panko
  • Pour mixture into pan
  • Top with Panko
  • Bake at 350 for 20 minutes
  • Enjoy!

Hobo Casserole for Two

Ingredients
  

  • ½ lb Ground Beef
  • 2 T Diced Onions
  • 2 T Diced green Pepper
  • 1 Clove of Garlic minced
  • 1 T Flour
  • 1 t Tomato Paste
  • 1 ½ c Beef Broth
  • 2 C Diced Potatoes
  • 1 c Green Beans
  • ½ c Shredded Cheddar Cheese

Instructions
 

  • Preheat oven to 400
  • Brown ground beef, onions, peppers, and garlic
  • Add Tomato Paste
  • Sprinkle with flour and stir
  • Add 1 ½ c Beef Broth and bring to a boil
  • Mix together the beef mixture, potatoes and green beans.
  • Add this mixture to the pan.
  • Top with Cheddar Cheese
  • Cover with foil and bake for 30 minutes
  • Uncover and bake for 5-10 more minutes until the cheese is well melted
  • Enjoy!

2 Serving Tamale Pie

Ingredients
  

  • ½ lb Ground Beef
  • 2 T Diced Onions
  • 2 T Diced Green Pepper
  • 1 Clove of Garlic minced
  • 2 T Frozen Corn
  • 1 Roma Tomato Diced
  • 1 c Enchilada Sauce
  • ½ c Cheddar Cheese
  • 1 c Masa Flour
  • ½ t Baking Powder
  • ¾ c Beef Broth

Instructions
 

  • Preheat oven to 400
  • Brown ground beef, onions, peppers, and garlic
  • Add tomatoes, corn and Enchilada Sauce to beef mixture
  • Top with cheese
  • Make the Masa topping by adding the Masa Flour, Baking Powder and Beef Broth
  • Place the masa topping between two pieces of plastic wrap and press flat.
  • Place flatten topping on the beef mixture.
  • Bake at 400 for 20 minutes
  • Enjoy!

2 Serving Neiman Marcus Chicken Casserole

Ingredients
  

  • 2 c Cooked Chicken Shredded
  • ½-1 c Cream of Chicken Soup
  • ½ c Sour Cream
  • 1 c Shredded Cheddar Cheese
  • ¼ c Sliced or Slivered Almonds
  • 2 Slices of Cooked Bacon Chopped
  • 1 t Frank’s Hot Sauce
  • ½ c Crushed Ritz Crackers
  • 2 T melted Butter
  • 2 T Diced Green Onions

Instructions
 

  • Preheat oven to 375
  • Combine chicken, cream of soup, sour cream, almonds, bacon, hot sauce and cheddar cheese.
  • Add to glass pan
  • Make the ritz cracker crumb topping by mixing the crushed crackers and butter
  • Top casserole with the ritz cracker mixture
  • Bake at 375 for 30-35 minutes
  • Enjoy!

    I enjoyed cooking when I had someone to cook for. When I became a household of one, a meal was a jar of peanut butter in one hand and a spoon in the other. I knew that wasn’t good, but couldn’t bring myself to fire up the oven, three burners, and spend the time/effort I had in the past just for myself. So, I’m trying to find a happy medium, a reasonably tasty, simple meal for one, or two with leftovers would be even better. Happy to have stumbled across this site in my effort to reform and move past peanut butter.
