Autumn Squash Soup

Rich, smooth, and slightly sweet—this fall classic is made with frozen butternut squash ,pumpkin, carrots onion, garlic, and an optional  splash of cream.

Ingredients
  

  • ¼ c Frozen Butternut Squash
  • ¼ c Canned Pumpkin
  • 2 T Diced Carrots
  • 1 T Diced Red Pepper
  • 1 T Diced Onion
  • ¾ c Vegetable or Chicken Broth
  • Minced Garlic Clove
  • ¼ t Cinnamon
  • 1/4 t Ginger
  • ¼ t Salt
  • ¼ t Pepper
  • 1/8 t Nutmeg
  • 1 T Heavy Cream. This is optional.

Instructions
 

  • Combine all ingredients and add to the Crockpot. Cook on low for 4 hours or High for 2 Hours.
  • Once the cooking is finished, use a immersion or regular blender to blend the veggies smooth.
  • If the soup is too thick, add ¼ c of stock to thin the soup.
  • Enjoy!

  • 1 c Chopped Meat
  • 1 T Frozen Corn
  • 1 T Lima Beans
  • ¼ c Diced Potatoes
  • 1 T Diced Onion
  • 1 T Red Pepper
  • 1 t Tomato Paste
  • ½ t Apple Cider Vinegar
  • ½ t Worcestershire Sauce
  • ¼ c BBQ Sauce

Instructions
 

  • Add all ingredients to the crockpot and cook on High for 2 hours or on Low for 4 hours.
  • Enjoy!

Chicken and Wild Rice Soup

Ingredients
  

  • 1 T Diced Onion
  • 1 T Diced Celery
  • 1 T Diced Carrots
  • 1 T Mushrooms
  • 1 Chicken Breast Cubed
  • ¼ c Boxed Wild Rice I used Ben’s Family recipe in creating the recipe
  • 1 t Wild Rice Seasoning Blend this is the packet that is in the box of wild rice
  • 1 c Chicken Broth

Instructions
 

  • Add all ingredients to the crockpot and cook for High for 2 Hours or Low for 4 Hours. Once the cooking is complete, if the soup is too think add ¼ c of Broth.
  • Enjoy!

Broccoli Cheddar Soup

This creamy broccoli cheddar soup is the ultimate comfort food—rich, cheesy, and loaded with tender broccoli florets. Made with sharp cheddar, onions, carrots and a touch of cream cheese, it's a warm, satisfying bowl perfect for chilly nights or cozy lunches.

Ingredients
  

  • 1 T Diced Onion
  • 2 T Shredded Carrots
  • ½ c Chopped Broccoli
  • 1 T Diced Celery
  • ½ c Chicken Stock
  • ½ c Milk
  • ¼ c Shredded Cheddar Cheese
  • 2 T Cream Cheese
  • Salt and Pepper

Instructions
 

  • Add all ingredients to the crockpot except the cheddar cheese and cream cheese.
  • Cook on High for 1.5 hours or Low for 3.5 Hours.
  • Add your cheese and cream cheese and cook for 30 more minutes. If your soup is not thick enough for your liking you can add a corn starch slurry to the soup. A cornstarch slurry is 1t of broth to 1t of corn starch.
  • Enjoy!

Mexican Street Corn Chowder

It’s hearty, full of flavor, and perfect for transitioning from summer to fall. Finished with a swirl of crema or cream cheese, this soup brings a street-food twist to your bowl—no grill required.

Ingredients
  

  • ¼ c Frozen Corn
  • 1 C Vegetable Broth
  • ¼ c Diced Potatoes
  • 1 T Diced red Pepper
  • 1 T Diced Poblano or Jalapeno
  • 1 T Diced Onion
  • 1 Clove of Garlic Minced
  • 1 t Taco Seasoning
  • Wedge of Lime
  • 1 T Cream Cheese
  • 1 T Heavy Cream This is optional, but it will make your soup creamy

Instructions
 

  • Add all ingredients except the lime and cream cheese, and heavy cream if you are using it.
  • Cook on high for 2 hours or low for 4 Hours.
  • Once cooking is complete, add the juice of the lime wedge, the cream cheese and the heavy cream if you are using it.
  • Top with Tajin seasoning for additional flavor.
  • Enjoy!

Taco Seasoning Blend

Ingredients
  

  • 1 T Chili Powder
  • 1 T Cumin
  • 1/2 t Salt Pepper, Paprika, Garlic Powder, Onion Powder, and Oregano
  • 1/4 t Pepper Flakes

Instructions
 

  • Combine all seasonings and place in an airtight container.

Cooking for one doesn’t have to be boring, repetitive, or wasteful. With a slow cooker and a little planning, you can enjoy warm, flavorful, and cozy meals all fall long.
