Mexican Street Corn Chowder

Created by Stacey
Inspired by the bold flavors of Mexican street corn (elote), this chowder is a creamy, blend of sweet corn, red pepper, lime, and a hint of garlic. It’s hearty, full of flavor, and perfect for transitioning from summer to fall. Finished with a swirl of crema or cream cheese, this soup brings a street-food twist to your bowl—no grill required.
