Blueberries and Cream Oatmeal

Fresh blueberries and a splash of Heavy Cream at the end will have you making this again and again!

Ingredients
  

  • ½ c Oats
  • 1 c milk
  • ¼ c Blueberries
  • ¼ t Cinnamon
  • ¼ t Salt
  • 1 T Maple Syrup as needed for sweetness
  • 1 T Heavy Cream

Instructions
 

  • Add all ingredients except the maple syrup and heavy cream to the crockpot.
  • Cook on High for 2 Hours.
  • Stir and check for doneness, adding more time if needed.
  • Once cooking is over, if you need to add any sweetener add the maple syrup.
  • Add the Heavy Cream and Enjoy!

Breakfast Burrito

Turn your leftovers from Taco Night in to a delicious Breakfast Burrito with this recipe.

Ingredients
  

  • ¼ lb Taco Meat
  • 2 Eggs
  • ¼ c Pepper Jack Cheese
  • 1 t Diced Jalapeno
  • 1 T Diced Onion
  • 1 T Milk
  • ½ Avocado
  • 1 T Chopped Tomato or Salsa

Instructions
 

  • Combine all the ingredients except the avocado and tomatoes.
  • Line your crockpot with parchment paper and spray with nonstick spray.
  • Pour your burrito filling into the crockpot and cook on High for 2 Hours.
  • Once it has finished cooking place your burrito filling in to a tortilla, add the avocado and tomatoes and roll into a burrito.
  • At this point you can toast it if you’d like.
  • Enjoy!

Prep Ahead Breakfast Casserole

Prep this one the night before and you'll have this delicious casserole ready for the crockpot in the morning.

Ingredients
  

  • 1 C Chopped Bread I used a Hamburger Bun
  • 2 Eggs
  • ½ c Milk
  • ½ c Cheddar Cheese
  • ¼ lb Browned Sausage
  • ¼ Salt
  • ¼ t Pepper

Instructions
 

  • Combine all ingredients and place them in a deli container overnight in the refrigerator.
  • Line your slow cooker with parchment paper and spray with a nonstick cooking spray.
  • When the milk and egg mixture has soaked into the bread (I like to do at least 6 Hours, overnight if possible) place the mixture into the parchment lined 2 qt Slow Cooker.
  • Cook on High for 2 Hours. Check after 1 ½ hours to see if it is cooked through some slow cookers cook hotter than others.
  • Once it is cooked through, remove from the slow cooker, and enjoy!

    For the blueberries and cream oatmeal, do you use rolled oats or instant?

    1. Hi Sue! Any time I cook oats in the crockpot I use old fashioned oats, steel cut oats also work. The instant doesn’t hold up well in the crockpot. If you make it, be sure to let me know how it turns out.
