How do you feel about using beans in your chili? We love it at our house and I have a super simple chili recipe with homemade chili seasoning mix that you are going to LOVE! Then as a perfect side try these jalapeno corn muffins. Using frozen corn and fresh jalapenos you create these yummy muffins that are sure to make it into your meal rotation! Below are the recipes.
Chili Seasoning Mix
This is for a mild chili seasoning mix. Add 1/4 t of Crushed red Pepper Flakes to amp up the spice.
Ingredients
- 2 T Chili Powder
- 1 T Cumin
- 2 t Paprika
- 2 t Oregano
- 1 t Garlic Powder
- 1 t Onion Powder
Instructions
- Combine all ingredients and store in an air tight container.
Chili
This recipe uses my Chili Seasoning Mix. You can use the entire mixture, but I would suggest starting with 2 T of the chili seasoning and then add more to taste.
Ingredients
- Chili Seasoning Mix
- 1 lb Ground Beef Browned and Drained
- 1 can Dark Red Kidney Beans
- 1 6 oz can of Tomato Paste
- 1 15 oz can of Tomato Sauce
- 1 14.5 oz can of Fire Roasted Diced Tomatoes
Instructions
- Brown Ground Beef then drain off excess fat.
- Add remaining ingredients and simmer for atleast 30 minutes.
- Serve with Sour Cream and Shredded Cheddar Cheese. For added spice add a few sliced jalapenos
Jalapeno Corn Muffins
This recipe uses Jiffy Corn Muffin Mix, but any Cornbread Muffin Brand would work here.
Ingredients
- 1 Box Jiffy Corn Muffin Mix
- 1 Egg
- 1/2 c. Milk
- 1 Jalapeno finely diced
- 1 C Frozen Corn
- 1 C Shredded Cheddar Cheese
Instructions
- Combine all ingredients and place by spoonful in a greased muffin tin.
- Bake at 400 degrees for 15-20 minutes (until they are a nice golden brown).
