Jalapeno Corn Muffins

This recipe uses Jiffy Corn Muffin Mix, but any Cornbread Muffin Brand would work here.

Ingredients
  

  • 1 Box Jiffy Corn Muffin Mix
  • 1 Egg
  • 1/2 c. Milk
  • 1 Jalapeno finely diced
  • 1 C Frozen Corn
  • 1 C Shredded Cheddar Cheese

Instructions
 

  • Combine all ingredients and place by spoonful in a greased muffin tin.
  • Bake at 400 degrees for 15-20 minutes (until they are a nice golden brown).
