4 Easy 2-Serving Casseroles That Freeze Beautifully

Sloppy Joe Casserole for Two

Ingredients
  

  • 1 lb ground beef
  • 1 Chopped Onion
  • 1 Chopped Bell Pepper
  • 1 Clove of Garlic
  • 1.5 cups of Ketchup
  • 3 T BBQ rub
  • T Apple Cider Vinegar.
  • A Box of Corn Muffin Mix
  • ½ c Shredded Cheese
  • ¼ c Milk
  • 1 T Diced Jalapenos

Instructions
 

  • Brown the ground beef with the onion, peppers and garlic
  • Drain any fat or remaining liquid from the veggies
  • Add the BBQ rub, the ketchup abd the ketchup to the meat mixture
  • Pour into the casserole pan
  • Make your cornbread topping by combining the corn muffin mix, the cheese, milk and diced jalapenos and spread on top of the sloppy joe mixture in the casserole dish
  • Bake at 400 for 15 minutes. Do a knife test by running a butter knife through the center of the casserole and see if the cornbread is cooked through. If the knife does not come out clean, cover the dish with foil and bake for another 10 minutes.
  • Enjoy!

Chicken Cordon Bleu Casserole for Two

Ingredients
  

  • 2 Chicken Breasts
  • 2 Slices of Thinly Sliced Ham
  • 2 Slices of Swiss Cheese
  • 1 Broccoli Crown or 1/4 bag of Broccoli Florets
  • 1 Can of Cream of Chicken Soup or 10 ounces of My Copycat Cream of Chicken Soup My recipe can be found here https://staceyssimplemeals.com/copycat-cream-of-chicken-soup/
  • 1 T Dijon Mustard
  • 1 Box of Stove Top Stuffing prepared by the package directions.

Instructions
 

  • Combine the cream of chicken soup and the Dijon mustard. Layer the broccoli, then the chicken and pour the cream of chicken mixture over the top.
  • Top with the Ham, Swiss Cheese then the Stove Top Bake at 375 for 35 minutes. If the stuffing starts to brown too much simply lay a piece of foil over the top until the cooking time is complete. If you are going to freeze this, put your casserole together and freeze it unbaked. On the day you are ready to eat simply thaw it for 4-6 hours and bake at 375 for 35 minutes.

Stuffed Pepper Casserole for Two

Ingredients
  

  • ½ lb Mild Italian Sausage
  • 1 Red Bell Pepper Diced
  • 1 Onion Diced
  • 1 Garlic Clove Minced
  • 1 Small Zucchini Diced 3/4 c-1 c
  • 1 Roma Tomato Diced
  • 1 c Cooked Rice
  • 1 c Broth
  • 1 c Shredded Italian Cheese
  • 1 t Dried Basil
  • 1 T Tomato Paste

Instructions
 

  • Brown the Italian sausage with the peppers, onion, garlic and zucchini.
  • Drain any excess fat and add the tomato paste and basil
  • Add the rice and half of the cheese and stir to combine
  • Place in a greased casserole pan and top with the broth and remaining cheese
  • Bake at 350 covered with foil for 20 minutes
  • Uncover and bake until 5-10 minutes until the cheese is melted
  • Enjoy!

Sausage and Cheese Breakfast Casserole for Two

Ingredients
  

  • ½ lb Cooked Sausage
  • ½ c Milk
  • 4 Eggs
  • 1 c Shredded Cheese
  • 2 c Cubed Bread
  • ¼ t Salt
  • ¼ t Pepper

Instructions
 

  • Combine all ingredients and chill in the refrigerator overnight (6-8 hours)
  • If you chilled this in the glass pan, place in a cold oven and set the oven temperature to 350.
  • Bake at 350 for 30-35 minutes

  1. Stacey, I fixed your Chicken Cordon Bleu Casserole for our Thanksgiving dinner. I also used the copycat Cream of Chicken soup recipe in the casserole. It got a very good review.
