Roasted Tomato Soup for Two

Created by Stacey

Ingredients

  • 1 lb Tomatoes I prefer using Roma Tomatoes, but any tomato will work
  • 1/3 c Onions
  • 3 Peeled Garlic Cloves
  • ¼ c Fresh Basil Leaves or 1 T Dried
  • 1 T Sugar
  • 2 c Broth either Chicken or Vegetable Broth
  • 1 T Heavy Cream optional
  • Olive Oil

Instructions

  • Preheat oven to 425 degrees
  • Core the tomato and slice in half and place on a greased sheet pan
  • Place the onion, basil and garlic on the sheet pan with the tomatoes
  • Top with a little more olive oil and roast in the 425 oven for 30 minutes
  • Once the tomatoes are roasted add the broth, sugar and a few fresh basil leaves if you have them and blend
  • Once the soup is blended add heavy cream if you are using it.
  • Enjoy!

Notes

Crockpot instructions: Combine all ingredients except the cream and add to the Crockpot. Cook on low for 4 hours or High for 2 Hours. Once the cooking is finished, use a immersion or regular blender to blend the veggies smooth. If the soup is too thick, add ¼ c of stock to thin the soup. Add the cream if using. Enjoy!
Instant pot instructions: Sauté the onion, garlic, basil and tomatoes until the onion has softened. Add the broth and pressure cook on high for 10 minutes. Allow it to naturally release for 10 minutes then use an immersion blender to blend it smooth. Add the optional cream and Enjoy!
*Using a crockpot or Instant Pot will not give you the roasted flavor but it will still be delicious.

Below is the recipe for the Autumn Squash Soup for Two, if you are coming from YouTube these spice measurements are slightly different than what was shown in the video. After recipe testing the soup the next day the measurements shown in the video were a little strong and overpowered the squash so go with the measurements below.

  • 2 T Diced Celery
  • 2 T Diced Carrot
  • 2 T Diced Onion
  • 1 Clove Garlic Minced
  • 1 T Flour
  • ½ T Tomato Paste
  • ½ T Creole Seasoning Blend
  • 2 c Broth You can use seafood or chicken broth
  • ½ c Half and Half
  • 1/2 C Shrimp Chopped About 10-12 Large Shrimp
  • 1 t Sherry Wine
  • 1 t Parsley

Instructions

  • In a pan over medium high heat melt the butter
  • Add celery, carrots and onions to the pan and sauté until the veggies are tender
  • Once the veggies are tender add the creole seasoning, the tomato paste and the flour and stir
  • Add the broth and bring to a simmer
  • Once the broth has thickened slightly use an immersion blender to blend the broth and veggies smooth.
  • Add the diced shrimp and simmer until the shrimp are cooked
  • If you would like a smooth bisque, you can blend the shrimp once it is cooked through
  • Remove from the heat and add the half and half
  • Add the sherry wine and the parsley to the bisque.
  • Enjoy!

Notes

A few notes with this recipe, if you like a thicker bisque reduce the amount of broth to 1-1.5 cups.
You can also add heavy cream instead of half and half for a richer bisque. It does add a little sweetness so you may want to add a pinch of salt if you are using the heavy cream
This recipe is best made on the stovetop because shrimp overcooks very easily and it is easier to avoid overcooking the shrimp on the stovetop.
