Tuscan Chicken Meatballs

This recipe uses ½ lb ground chicken and makes 10 meatballs. You could bake these in the oven or Air Fryer, this is the Air Fryer version. Serve this over potatoes, spaghetti noodles or zucchini noodles.
- For the Meatballs
- ½ lb Ground Chicken
- ½ Egg simply mix your egg together and use half
- 1 T Bread Crumbs
- 1 T Parmesan Cheese
- 1 t Greek Seasoning
- 1 T Sundried Tomato Oil
- For the Sauce
- 2 T Butter
- 1 T Flour
- 1 Garlic clove minced
- 1 t Greek Seasoning
- 1 T Sundried Tomatoes
- 1 T Parmesan Cheese
- ½ c Chopped Spinach
- ¼ c Milk or Heavy Cream
- 1 c chicken Broth
Assemble the meatballs and cook in the Air fryer for 10-14 minutes.
While the meatballs are cooking make your sauce by melting the butter then adding the flour.
Whisk in garlic, milk and Chicken broth and bring to a simmer.
Once the sauce has thickened slightly add in the tomatoes, spinach and cheese.
When the meatballs have reached 165 degrees place in the sauce and stir to combine.
Serve over mashed potatoes, Noodles or Rice.
