Taquitos and Enchiladas

This is the recipe for both the Taquitos and Enchiladas

Ingredients
  

  • 3 Chicken Breasts
  • 16 Flour Tortilla Shells
  • 1 8 oz block of Cream Cheese
  • 1 Jalapeno Chopped
  • 2 Cups of Cheese plus a little extra for the top of the Enchiladas
  • Oil to Spray the tops of the Taquitos
  • Optional Enchilada Topping: Black Olives

Instructions
 

  • Shred chicken and mix together all ingredients. Place 1/4 c of filling in each tortilla and roll
  • Baking Taquitos: Bake at 400 for 10-15 minutes or until the tortillas are golden brown
  • Baking Enchiladas: Coat the bottom of an 8x8 pan with Enchilada Sauce. Place rolled enchiladas in the pan and top with Enchilada Sauce, Cheese and Black Olives
  • Bake at 400 15-20 minutes until the cheese is melted and the sauce is bubbly.
