Taquitos and Enchiladas

This is the recipe for both the Taquitos and Enchiladas
- 3 Chicken Breasts
- 16 Flour Tortilla Shells
- 1 8 oz block of Cream Cheese
- 1 Jalapeno Chopped
- 2 Cups of Cheese plus a little extra for the top of the Enchiladas
- Oil to Spray the tops of the Taquitos
- Optional Enchilada Topping: Black Olives
Shred chicken and mix together all ingredients. Place 1/4 c of filling in each tortilla and roll
Baking Taquitos: Bake at 400 for 10-15 minutes or until the tortillas are golden brown
Baking Enchiladas: Coat the bottom of an 8x8 pan with Enchilada Sauce. Place rolled enchiladas in the pan and top with Enchilada Sauce, Cheese and Black Olives
Bake at 400 15-20 minutes until the cheese is melted and the sauce is bubbly.
