“Sneaky” Manicotti

This chicken Manicotti Recipe has a sneaky ingredient...spinach. Chop fresh spinach and your family will think it's fresh herbs..it's a "sneaky" way to get the kids to eat Spinach.

Ingredients
  

  • 2 C Chopped Rotisserie Chicken
  • 1 C Fresh Spinach Chopped
  • 1.5 C Ricotta Cheese
  • 1 Minced Garlic Clove
  • 1 Jar of Marinara Sauce
  • 2 C Mozzarella Cheese
  • 1 C Parmesan Cheese
  • ½ T Oregano
  • ½ T Basil
  • ¼ t Salt
  • ¼ t Pepper
  • 1 Box of Manicotti

Instructions
 

  • Cook Manicotti Noodles to al dente (two minutes less than the instructions on the box)
  • Mix chicken, ricotta, garlic, oregano, basil, salt, pepper, chopped spinach and half of the parmesan and mozzarella cheese.
  • Place ¼ c of sauce in the bottom of an 8 x 8 baking dish
  • Fill manicotti noodles with chicken mixture and place in the baking dish.
  • Top with Marinara Sauce and remaining cheese.
  • Please note: If you are going to freeze this dish this would be the point that you would cover it tightly with foil and freeze.
  • Bake at 400 for 30 minutes. If baking from frozen leave manicotti covered and cook for 30 minutes at 375 then bump up your oven temperature to 400 uncover the manicotti and bake for 30 more minutes.
