Smashed Chicken Fajitas for Two

Ingredients
  

  • 1 lb Ground Chicken
  • 1 Onion Sliced
  • 1 Bell Pepper Sliced
  • 1 Garlic Clove Minced
  • 1 T Taco Seasoning
  • ½ t Ground Coriander
  • 4 Flour Tortilla Shells
  • Oil for pan

Instructions
 

  • Place chicken, taco seasoning and coriander into a bowl and mix
  • Spread ¼ of the chicken mixture on to a flour tortilla
  • Once you have all of the tortillas covered with the chicken mixture cook either on the stove top or in the air fryer
  • If you are cooking this on the stovetop place a little oil on to the pan and heat over medium heat
  • Once your pan is hot, place the fajita chicken side down on to the pan
  • Cook for 4-5 minutes until a nice crust has formed on the chicken
  • Flip and cook an additional 1-2 minutes until the chicken is cooked through
  • Once you have all the fajitas cooked set to the side and sauté your veggies
  • Once your veggies are softened and cooked place onto the cooked fajitas
  • Add any additional toppings such as salsa, shredded cheese, avocado or sour cream
  • Enjoy!

Notes

To air fry
Place the veggies in an air fryer liner and top with a little oil
Push the air fryer liner with the veggies to the side to make room for the fajita
Place the fajita into the air fryer
Air fryer at 365 for 9-10 minutes
Enjoy!
 
To freeze these you would spread the seasoned chicken mixture onto the tortilla and then layer with parchment paper. These can be cooked straight from the freezer, no need to thaw.
