Boil the potatoes until they are fork tender

While the potatoes are boiling create your potato salad dressing

In a bowl combine the egg yolks, the relish, mayo, mustard, salt ,pepper, paprika, onion and the vinegar

Stir and smooth the egg yolks until everything is combined

Dice the egg white and add to the dressing mixture

Once the potatoes are fork tender add them to the bowl with the dressing and stir until the potatoes are coated.
