Combine all ingredients except your pie crust and place into the slow cooker.
Cook on High for 2 Hours or Low for 5-6 Hours. If you are cooking on high you will want to cut your potatoes into the same size pieces as your mixed vegetables to make sure they are tender after 2 hours.
While your Chicken Pot Pie filling is cooking roll out your store bought pie crust, and place the bowl you will be serving the pot pie on top. Press the bowl into the dough to leave the perfect sized impression in the dough. Cut around the dough using the impression as your template, and bake.
You can bake this by the package directions or bake in the Air Fryet at 400 for 8 minutes, flipping halfway through the cooking time.
Once your filling has finished cooking, place in to a bowl and top with your cooked pie crust.
