Mix pancake mix, milk, egg, and blueberries in a bowl
Spread melted butter in the bottom and up the sides of the rice cooker pot
Pour the pancake mix into the rice cooker pot.
Cook on the white rice setting
Check the pancake and make sure it’s cooked through. If it is not cooked through cook for another 5 minutes on the white rice setting.
Once cooking is complete, turn the pancake onto a plate.
Mix the lemon juice and the powdered sugar together to make the glaze
Top pancake with the lemon glaze.
