Meal Prep Kit Lemon Greek Chicken

Ingredients
  

  • 3 Chicken Breasts
  • 1 Yellow Squash sliced
  • 2 Zucchini sliced
  • 1 C Cauliflower chopped you could use Broccoli or Brussels Sprouts here if you wanted to
  • 1 Red Pepper chopped
  • For the Marinade:
  • Juice of 1 Lemon
  • Zest of ½ Lemon
  • 2 Garlic Cloves
  • ¼ C Olive Oil
  • 1 T of each Rosemary Basil and Oregano
  • ¼ t Salt
  • ¼ t Pepper
  • Optional Tzatziki Sauce

Instructions
 

  • Create your marinade and set to the side
  • Place the chicken in a Ziploc bag, and pour half of the marinade mixture over the chicken. Seal the bag and set that to the side
  • In a second Ziploc bag, place the veggies and pour over the other half of the marinade. Seal the bag and set to the side
  • In a third Ziploc bag place the bag of chicken, bag of veggies, and your instructions (the printable recipe or a recipe card)
  • This meal kit will stay fresh in the refrigerator for 2-3 days. Place in the freezer if it is going to be longer than the 2-3 days before you bake and eat this dish.
  • On cooking day
  • Preheat oven to 375
  • Place chicken and veggies on a well-oiled large sheet pan.
  • Bake at 375 for 20 minutes
  • *If you would like more of a char on the veggies at the 20-minute mark remove the chicken from the sheet pan to rest and bake just the veggies for an additional 10 minutes.
  • Top with Tzatziki Sauce
  • Serve and Enjoy!

Notes

You will also need 3 gallon-sized Ziploc bags to create the meal kit.
