Keto Chicken Schnitzel for One

This crispy Keto Chicken Schnitzel is the perfect low-carb meal that's ready in less than 20 minutes!

Ingredients
  

  • 1 Chicken Breast
  • 1/3 c Crushed Pork Rinds
  • 1 T Parmesan Cheese
  • 1/2 t Greek Seasoning blend
  • 1 Egg
  • Arugula
  • Pickled Red Onion
  • 1 Lemon Wedge
  • 1 T Olive Oil

Instructions
 

  • Beat egg in a bowl
  • In another bowl combine pork rinds, parmesan cheese and Greek seasoning
  • Dip the chicken in the egg and then into the pork rind mixture coating it completely.
  • Cook in the Air fryer or oven at 385 for 14 minutes, flipping the chicken over at the 7 minute mark
  • Toss the arugula in olive oil and a squeeze of the lemon wedge
  • Once the chicken has cooked through, top with arugula and pickled onions.
  • Enjoy!
