Keto Chicken Schnitzel for One

This crispy Keto Chicken Schnitzel is the perfect low-carb meal that's ready in less than 20 minutes!
- 1 Chicken Breast
- 1/3 c Crushed Pork Rinds
- 1 T Parmesan Cheese
- 1/2 t Greek Seasoning blend
- 1 Egg
- Arugula
- Pickled Red Onion
- 1 Lemon Wedge
- 1 T Olive Oil
Beat egg in a bowl
In another bowl combine pork rinds, parmesan cheese and Greek seasoning
Dip the chicken in the egg and then into the pork rind mixture coating it completely.
Cook in the Air fryer or oven at 385 for 14 minutes, flipping the chicken over at the 7 minute mark
Toss the arugula in olive oil and a squeeze of the lemon wedge
Once the chicken has cooked through, top with arugula and pickled onions.
