Gluten-Free Zucchini Fritters

This light and healthy recipe is perfect for anyone looking to cut out gluten without sacrificing flavor. It's packed with fresh vegetables and comes together quickly. Serve it on its own or top with my Tzatziki Sauce. Great for lunch or a quick weeknight dinner side.
- 1 Large Zucchini Grated
- 1 T Diced Onion
- 1 T Diced Red Pepper
- 1/3 c Almond Flour
- 1 Egg
- 1 t Parsley
- 1 t Greek Seasoning
- 1/8 t Salt
- Oil for frying fritters
Warm oil in sauté pan
Combine all ingredients and shape into patties.
Break off a piece of fritter and check to see if the oil is at the correct temperature. You can tell because the sample will turn brown and crispy.
Fry fritters flipping the fritter when the edges are light brown.
Drain on a paper towel.
Serve with Tzatziki Sauce, Marinara Sauce or just a squeeze of lemon.
