Easy Weeknight Ribs for One in the Instant Pot

Ingredients
  

  • Half Rack of Ribs
  • BBQ Seasoning Blend
  • 1 Potato cubed
  • 1 Carrot Sliced
  • 1 T Butter
  • 1 T Water
  • 1 T Diced Onion
  • Sliced Onion for the bottom of the crockpot
  • House Seasoning
  • 6 oz Water or Beef Broth for the crockpot
  • Optional Liquid Smoke
  • BBQ Sauce

Instructions
 

  • Make your foil packet with your potatoes and carrots by placing your potatoes, carrots and diced onions into a piece of foil and fold the foil around the veggies making a bowl.
  • Add your house seasoning, 1 T of water and butter to the foil bowl
  • Seal the bowl by pinching the foil at the top
  • Set to the side
  • Place your water, sliced onions and a few drops of liquid smoke, if using, in the bottom of the crockpot
  • Place the foil packet on top of the onions.
  • Season your ribs with the bbq seasoning and place on top of the foil packet
  • Cook on High Pressure for 30 minutes then let it Natural Release or 10 minutes
  • Remove the ribs from the instant pot and brush with BBQ sauce
  • If you’d like to crisp the ribs up a little you can put them under the broiler for just a few minutes.
  • Remove the veggie packet
  • Serve and Enjoy!
