Crockpot Shepherd’s Pie for One

Ingredients
  

  • ¼ lb Stew Meat
  • 2/3 c Frozen Mixed Vegetables
  • 1 T Diced Onion
  • 1 Garlic Clove Minced
  • 1 t Tomato Paste
  • 1 t Worcestershire Sauce
  • 1 c Beef Broth
  • 1/2 T Flour
  • House Seasoning
  • 1 Medium-sized potato
  • 1 T Butter
  • 1 T Sour Cream
  • 1 T Milk
  • 1/8 t Salt
  • 1/8 t Pepper
  • 1 t Corn Starch mixed with 1 T Water this is optional if you want to add it as a thickener

Instructions
 

  • Coat the stew meat with house seasoning and flour
  • Place the stew meat, vegetables, diced onion, garlic clove, tomato paste, Worcestershire Sauce, and beef broth in the crockpot
  • Wrap the potato in foil (if using) and place in to the crockpot.
  • Cook on high for 4-5 hours or low for 7-8 hours. You’ll know it is done when the potato is tender (I like to check it with a skewer)
  • Once the potato is tender remove it from the crockpot
  • Check the shepherd’s pie if it thick enough to your liking skip adding the cornstarch slurry. If you would like to thicken the mixture add your cornstarch slurry
  • Unwrap the potato and mash it with the sour cream, salt and pepper , and milk
  • Top your shepherd’s pie with the mashed potato
  • Enjoy!
