Crockpot Pumpkin Bread Pudding for Two

Ingredients
  

  • 1 C Cubed Bread. I used Hawaiian Rolls but bakery bread would work as well.
  • ¼ c Pumpkin
  • 1 Egg
  • ½ C Milk
  • ½ t Vanilla
  • 2 T Brown Sugar
  • Pinch of Salt
  • For the Praline Topping
  • 1 T Butter
  • 1 T Brown Sugar
  • 1 T Pecans

Instructions
 

  • Create your custard by combining all ingredients except the cubed bread.
  • Once your custard is combined, add your bread.
  • Soak for at least 6 hours or up to 24 hours so the custard can absorb into the bread.
  • Line the crockpot with parchment paper or an air fryer liner.
  • Place into the 2 qt crockpot and cook on high for 2 Hours
  • Once your bread pudding has finished cooking make the praline topping.
  • Melt 1 T Butter and 1 T of Brown Sugar and stir until the brown sugar is smooth and bubbling.
  • Add pecans
  • Pour praline topping over the bread pudding.
  • Enjoy!
