Crockpot Poppy Seed Chicken for Two Using Homemade Cream of Soups

Ingredients
  

  • 1 c Homemade Cream of Chicken Soup
  • 1 c Homemade Cream of Celery Soup
  • 1/4 c Sour Cream
  • 2 Chicken Breasts
  • 1 t Poppy Seeds
  • 1 T Grated Parmesan Cheese
  • 10 Ritz Crackers crushed
  • 1 t Melted Butter

Instructions
 

  • Spray the inside of the crockpot
  • Place chicken, the cream of soups and the sour cream in the Crockpot
  • Cook on High for 2-3 Hours or Low for 4-5 Hours
  • Remove the chicken and shred
  • Stir the cream of soups and sour cream until smooth and place your chicken back into the crockpot
  • Make your cracker topping by combining the crushed crackers, butter and parmesan cheese
  • Top the chicken mixture with the cracker topping and cook for another 30 minutes. Be sure to crack the lid of the crockpot during this so that the steam does not build up and make your crackers soggy.
  • Serve over a baked potato, egg noodles, or rice
  • Enjoy!

Notes

If you are not using homemade cream of soup and using the canned instead, add 1 can of cream of soup (either cream of chicken or cream of celery) and add 1/4 c Chicken Broth to the soup to thin it out a bit.
