Crockpot Honey Sesame Chicken Lettuce Wraps

Tender chicken thighs slow-cooked in a sweet and savory honey-sesame sauce, served in crisp lettuce cups for a light, flavorful, and healthy meal.
- 2 Boneless Skinless Chicken Thighs
- 2 T Diced Water Chestnuts
- 2 T Diced Green Pepper
- 2 T Diced Onion
- 1 Garlic Clove Minced
- 1/3 c Honey
- 3 t Soy Sauce
- 1 T Rice Vinegar
- 3 t Sesame Seeds
- ½ t Ground Ginger
- ¼ t Black Pepper
- Romaine Lettuce for lettuce wrap
- 1 T Chopped Scallions optional
Make the honey sesame sauce by combining garlic, honey, soy sauce, rice vinegar, 1 t sesame seeds, ground ginger and black pepper.
Place the onion, pepper and onions to the crockpot.
Top with Chicken Thighs
Cover Chicken Thighs with sauce
Cover and cook on High for 2 Hours or Low for 4 Hours
Remove cooked chicken and shred.
Add shredded chicken back into the sauce.
Using a piece of Romaine Lettuce create a lettuce wrap.
Top with scallions and remaining sesame seeds.
