Air Fryer Eggplant Parmesan

Ingredients
  

  • 1 Small Eggplant sliced into ½ inch rounds
  • 1 c Bread Crumbs
  • 1 t Greek Seasoning Blend
  • 1 Egg
  • Salt
  • Spray oil
  • Marinara Sauce
  • Shredded Mozzarella Cheese
  • Cooked Spaghetti Noodles or Zucchini Noodles

Instructions
 

  • Salt the eggplant rounds and allow to sit for 10-15 minutes
  • Dry the eggplant with a paper towel to remove the moisture that the salt brought out of the eggplant
  • Beat egg in a bowl and in another bowl add the breadcrumbs and Greek seasoning
  • Dip the eggplant into the egg and then into the seasoned bread crumbs
  • Place the breaded eggplant into the air fryer and spray the top with spray oil
  • Air fry at 385 for 10 minutes, flipping at the 5-minute mark (spray the other side of the eggplant once you flipped it)
  • Top the eggplant with marinara and cheese and cook for one more minute
  • Once the eggplant is finished cooking top the noodles with the eggplant parmesan
  • Enjoy!
