Salt the eggplant rounds and allow to sit for 10-15 minutes
Dry the eggplant with a paper towel to remove the moisture that the salt brought out of the eggplant
Beat egg in a bowl and in another bowl add the breadcrumbs and Greek seasoning
Dip the eggplant into the egg and then into the seasoned bread crumbs
Place the breaded eggplant into the air fryer and spray the top with spray oil
Air fry at 385 for 10 minutes, flipping at the 5-minute mark (spray the other side of the eggplant once you flipped it)
Top the eggplant with marinara and cheese and cook for one more minute
Once the eggplant is finished cooking top the noodles with the eggplant parmesan
