Simple Homemade Enchilada Sauce, Taquitos and Chicken Enchiladas

Today’s simple meal gives you two options with the same ingredients. Make one or both! They freeze beautifully and can be adjusted to any size family. Enjoy!

Enchilada Sauce

Making your own Enchilada Sauce is so easy! This makes a mild sauce, you can add another pepper to amp up the spice a bit.

Ingredients
  

  • 2 Chipotle in Adobo Peppers
  • 1 15 oz can of Tomato Sauce
  • 1 C Chicken Broth
  • 2 Cloves Garlic
  • 1/2 t Cumin

Instructions
 

  • Add all the ingredients together and blend to combine.

Taquitos and Enchiladas

This is the recipe for both the Taquitos and Enchiladas

Ingredients
  

  • 3 Chicken Breasts
  • 16 Flour Tortilla Shells
  • 1 8 oz block of Cream Cheese
  • 1 Jalapeno Chopped
  • 2 Cups of Cheese plus a little extra for the top of the Enchiladas
  • Oil to Spray the tops of the Taquitos
  • Optional Enchilada Topping: Black Olives

Instructions
 

  • Shred chicken and mix together all ingredients. Place 1/4 c of filling in each tortilla and roll
  • Baking Taquitos: Bake at 400 for 10-15 minutes or until the tortillas are golden brown
  • Baking Enchiladas: Coat the bottom of an 8×8 pan with Enchilada Sauce. Place rolled enchiladas in the pan and top with Enchilada Sauce, Cheese and Black Olives
  • Bake at 400 15-20 minutes until the cheese is melted and the sauce is bubbly.
