Meal Prep Kits for One | 10 Easy Meals from Just a Few Groceries

One of the best ways to simplify meal planning is to build your own meal prep kit — and today I’m showing you exactly how I do it. This week, I’m prepping 10 meals for my daughter as she moves to a new town to start an exciting chapter in her career.

Chicken Fajitas for One

Ingredients
  

  • 1 Chicken Breast Cut into Strips
  • ½ Pepper Sliced
  • ½ Onion Sliced
  • 1/2 Garlic Clove minced
  • ½ T Fajita Seasoning
  • 1 T Oil
  • ¼ c Cheese
  • 3 Flour Tortillas

Instructions
 

  • Slice chicken and veggies and season chicken
  • Sauté in a pan with a little oil for 4 minutes on each side and remove from pan to rest
  • Sauté the onions and peppers and garlic in the hot pan
  • Serve in warmed tortillas and Enjoy!

Sloppy Joes For One

Ingredients
  

  • 2 Hamburger Buns
  • 1/3 lb Ground Beef
  • 2 T Diced Onions
  • 2 T Diced Peppers
  • ½ clove Garlic Minced
  • ¾ c Ketchup
  • 1 T BBQ Rub
  • 1 t Apple Cider Vinegar

Instructions
 

  • Sauté peppers and onions in a pan with a little oil, once they are softened add in the garlic.
  • Push the veggies to the side of your pan and add your ground beef.
  • Brown ground beef and mix the veggies in with the beef.
  • Drain if necessary.
  • Add the ketchup, BBQ seasoning and the Apple Cider Vinegar
  • Stir to combine
  • Serve in the buns
  • Enjoy!

BBQ Seasoning

Ingredients
  

  • 1 T Salt
  • 1 T Pepper
  • 1 T Smoked Paprika or Chipotle
  • 2 T Brown Sugar
  • 1-1/2 t Garlic Powder and Onion Powder
  • 1/2 t Thyme

Instructions
 

  • Combine all seasonings and store in an airtight container.

BBQ Chicken Sandwiches for One

Ingredients
  

  • 1 Chicken Breast
  • 1 T Onion
  • 1 t House Seasoning
  • ¼ c BBQ Sauce of your choice

Instructions
 

  • Dice the chicken and the onion and sauté until cooked (about 5-7 minutes)
  • Top with BBQ Sauce
  • Place into a Hamburger Bun
  • Enjoy

Lemon Greek Chicken

Ingredients
  

  • 1 Chicken Breast
  • 2 T Diced Red Onion
  • ½ C Chopped Zucchini
  • 2 T Red Pepper
  • For the Marinade:
  • Juice of 1/3 Lemon
  • 1/2 Garlic Clove Minced
  • ¼ C Olive Oil
  • 1 t of each Rosemary Basil and Oregano If you have seen the video, I used 1 Tablespoon of each, for the single serving. It was a little herbaceous, I suggest using 1 Teaspoon of each instead.

Instructions
 

  • Preheat oven to 375
  • Place all of the marinade ingredients together and coat the chicken
  • Place the veggies on a well-oiled large sheet pan.
  • Bake at 375 for 15-20 minutes
  • *If you would like more of a char on the veggies at the 20-minute mark remove the chicken from the sheet pan and bake just the veggies for an additional 10 minutes.
  • Enjoy!

Air Fryer Taquitos for One

Ingredients
  

  • 1 Chicken Breast Cooked and Shredded
  • 2 T Cream Cheese
  • ½ c Shredded Cheese
  • 1 T Diced Green Pepper. You could also use Jalapeño here
  • ¼ t Taco Seasoning
  • 4-6 Flour Tortillas

Instructions
 

  • Shred chicken and mix together all ingredients.
  • Place 1/4 c of filling in each tortilla and roll
  • Air Fry at 385 for 12-15 minutes, flipping halfway through until the tortillas are golden brown
  • Enjoy!

Air Fryer Buffalo Taquitos

Buffalo Chicken Pita Pizza for One

Ingredients
  

  • Pita
  • 1 Chicken Breast Diced into small pieces
  • 1 t House Seasoning
  • ¼ c Shredded Cheese
  • 4 T Melted Butter
  • 4 T Frank’s Hot Sauce
  • ½ Clove Garlic Minced

Instructions
 

  • Season the chicken with the house seasoning
  • Sauté the chicken in and pan
  • Once the chicken is cooked top with the garlic, franks and melted butter
  • Place the pita on a baking sheet, top with the cooked cooked and buffalo sauce
  • Top with cheese
  • Broil until the cheese is melted
  • Enjoy!

House Seasoning Blend

This is our go to seasoning blend. Use it on vegtables, burgers, or chicken it goes with everything!

  • 1 T Salt
  • 1 T Pepper
  • 1 T Garlic Powder
  • 1 T Onion Powder

  • Combine all spices and store in an airtight container.

    Where do I find the little prep card instructions for these freezer meals for 1?

    1. Hi Donna!
      You could create the index cards yourself by hand or print the recipe, and put the recipe in the freezer bag. You can choose “smaller” as an option under the print option.
