Ran out of dinner ideas? I made a delicious, cozy one pot meal for two using half a box of pasta, leftover chicken broth, and some random veggies I had in the fridge. No fancy ingredients, no stress — just a simple, flavorful dinner made from what I already had.
Whether you’re low on groceries or just want to cook without overthinking it, this is a perfect pantry + fridge clean-out meal. Bonus: only one pot to wash!

Pasta Primavera
Ingredients
- 2 T Diced Onion
- 2 T Diced Red Pepper
- ½ lb Diced Chicken
- 1 Clove Garlic Minced
- 1 T Greek Seasoning
- 2 C Chicken Broth
- 1 C Cavatappi Noodles
- ½ c Grated Parmesan Cheese
- ½ C Cherry Tomatoes
- ¼ c Chopped Asparagus
- 1 Zucchini Diced
- Olive Oil to coat chicken
Instructions
- Toss chicken in olive oil, minced garlic clove and ½ T Greek Seasoning
- Sauté chicken, peppers and onion
- Add pasta and broth and bring to a boil
- Boil for 12 minutes
- Add remaining Greek seasoning, asparagus, zucchini, and cherry tomatoes and cook until the veggies and pasta are tender
- Top with Parmesan Cheese and Enjoy!
Greek Seasoning Blend
Ingredients
- 2 T Oregano
- 2 T Basil
- 1 T Garlic Powder
- 1 T Onion Powder
- 1 t Salt
- 1 t Pepper
Instructions
- Combine all spices and store in an airtight container.
