  • 2-4 Boneless Pork Chops
  • 1 Egg
  • ½ c Italian Seasoned Panko Bread Crumbs
  • ½ c Plain Bread Crumbs you can use 1 c of only Italian Seasoned Bread Crumbs if the ingredients work well for you
  • ½ c Flour
  • 1 C Arugula
  • ½ Lemon
  • 1 T Olive Oil
  • ¼ c Pickled Onions
  • 2 c Assorted Vegetables such as Broccoli, Cauliflower, and Brussels Sprouts
  • Oil Spray
  • House Seasoning

Instructions

  • Using a meat tenderizer pound the pork chops thin and remove any excess fat.
  • Set up your batter station with the beaten egg, flour and panko in separate bowls
  • Bread your pork chop in the flour, then the egg, then the breadcrumbs
  • In a separate bowl, spray your veggies with oil and season the veggies with House Seasoning
  • Spray the bottom of your air fryer to prevent sticking
  • Place the breaded pork chops and your veggies in the air fryer. For an added crunch you can spray the top of your pork chop with your oil spray.
  • Air fry at 365 for 12-14 minutes flipping at the 6 minute mark.
  • While your pork chops and veggies are in the air fryer, season your arugula with the olive oil and lemon and set to the side
  • Once cooking is complete, top your schnitzel with the arugula and pickled onions
  • Enjoy!

Notes

If you are cooking this on the stove top, heat 4 T of oil in a pan and pan fry on each side for 3-4 minutes. Check the temperature and if it has not reached 160 place in the oven at 350 for 5-10 minutes until it comes to temperature.
